This morning I'm off to my happy place, acupuncture. I preach about it, because it works. I'll be so relaxed afterwards. Dinner will likely be Chicken Florentine and salad.

Today I have a quick 15 min. dentist appointment. He's just going to smooth out a rough edge on a bonded tooth for me. Then I'll stop by the HEB near him and pick up a few things we've run out of. Would rather be staying at home today in my pjs because it is cold and raining. Plan to spend the afternoon in my sewing room. I haven't been in there for a couple of weeks because I've been having a heck of a gout flare in my foot and haven't felt like it. Not completely over it, but definitely feeling good enough to do something besides sit and watch tv. Dinner will be butternut squash soup for me and some tenderloin tips for DH. We usually grill them, but with the rain today I'd rather bake them in the oven. Does anyone have tips on doing that so they aren't dried out? Enjoy your acupuncture today scrapmaven!

It's cold and rainy here too. I'm thinking Lauren's Sausage Soup would be a good choice for dinner, pared with a green salad and bread for DH. Hugs to all our tribe-mates who are sick, hurting or sad.

Well yesterday I got invited over to my little Lola‘s house (82 year old neighbor who I adopted)for lunch. I didn’t make it back here until 3:15 PM; so I didn’t get a chance to make the homemade chicken soup. So that’s what’s for dinner. It is so cold here. Hugs to everyone who is hurting or sad. We are meeting at Olga's tonight. When DS was young, we used to go with another mom and her son to Olga's every Wednesday after kindergarten got out at noon. The boys loved the toys they gave out ~ decks of cards and such ~ and the mom and I loved the steak gyros! The restaurant was at my old local mall but it closed down years ago. Can I have the recipe to Lauren’s Sausage soup? Here you go. The amount on the left is the original recipe and the amount on the right is how I revised it ~ basically doubling it. It freezes well. You choose! 1/2 lb sausage - 1 lb sweet Italian sausage 1 onion chopped - 2 onions chopped 1 2 lb-3oz can Italian tomatoes - 2 14 oz cans Italian tomatoes (the original was too *tomatoey* for DH 2 14 oz cans chicken brother - 3 cans broth 1 tsp crushed basil - same 1/2 cup orzo - 3/4 cup orzo S & P to taste Remove casings & cook sausage, breaking up until browned all over, and saute onions. Add tomatoes, broth, basil, S & P. Bring to a boil. Stir in orzo. Simmer 20 minutes. Note: you may want to add more broth or some water as it sometimes gets more like a stew when leftovers are refrigerated. I think the orzo absorbs the liquid but it still tastes great.

I had a much lighter day, therapy wise today. Just 2 compulsory sessions - and they were two of my favourite things; lymph drainage massage and the motorised knee bender machine. I also did a gym session this afternoon - it is also on my list for tomorrow, so I am going to check with my doctor if that means I have to do gym everyday, or it is just there as an option.
Dinner tonight was so yummy - a thick vegetable soup with maultaschen, a Schwäbisch (area of Germany near Stuttgart) variety of filled pasta.

Dd is home sick. Again. While we wait 30 days for insurance to see if she should restart IVIG. While she gets sick. Again.
Anyways...
I roasted a whole chicken yesterday and am turning that into soup. Making my own vegetable stock and dd and dh can add chicken to their bowl of soup. Also making muffins - blueberry lemon and cinnamon apple.

I keep thinking we're going to get snow when it is really cold and cloudy. It was fun last February when it snowed. But after a few hours, I was ready for it to go away!

Sending happy thoughts to everyone! I copied down the Sausage soup recipe- I might make that tomorrow night with some venison Italian sausage that DH brought back from the ranch. Tonite has to finally be the pork chops and veggies that I've talked about all week. I felt horrible last evening, so it was canned soup and early bedtime. This sinus/cold needs to go away.

@sunnycalimom, my heart aches for you everytime you have to face your insurance company to get much needed treatments approved. I go through this, too and it's horrible. Your specialist is the expert, not some faceless, nameless person at an insurance company.

We are having pork chops tonight in our quest to clear out some freezer space. Not that 2 little pork chops is making a big dent in the freezer, but at least it's something! Probably Stove Top and Green Beans for dh, and I might have a few pierogies.

I'm going out for craft night. We are meeting at Olga's tonight. So a gyro for me! I like Olga's a lot, but the service at the one closest to us is so awful that we will not set foot in there. Last fall, I was off work and decided to give them one more chance, so I called in a carryout. After standing at the carryout counter with employees telling me and the other woman waiting that someone would be with us "in a minute" probably 15 times, she went behind the counter and grabbed our orders and I put my cash on the counter and left. The other woman needed to use a card, so I'm not sure how much longer she had to wait. And my food was cold when I got it home because it had been sitting there so long.

scrapmaven glad you enjoyed your acupuncture. We don’t have Olga’s so I’m not familiar with it. The cable/WiFi repair person is back. It quit working 2 hours after they left last night. So annoying but I am getting an upgraded iPhone for our inconvenience. I’m happy about that because I wanted the 3 camera one for my upcoming Italy trip. My bff gave me the Martha Stewart rotary vegetable thing. It worked great for zucchini noodles. So I’m making those with all the veggies we have. Shrimp for me sausage for dh. I don’t really feel hungry. My sister called. She has my dad at the dr. He’s lost 50lbs and is coughing up blood. He’s fallen 4 of the last 5 days. 😟 destined2bmom glad your son enjoyed his trip
