Three Italy stops: LaSpezia (Florence), Civitaveccia (Rome) and Naples. Since you’re docking at La Spezia, have you considered the Cinque Terre? Cinque Terre are fantastic. Fun fact, Lord Byron used to swim there.

Where do you dock in Italy?
I love, love, love Naples, but it is not for everybody. Siena is a beautiful little city and I would strongly recommend it to everybody. There are also some nice little coastal towns. It all depends on where you dock. (<- I've never been on a cruise, but I refer to the travel between towns and cities.)
Three Italy stops: LaSpezia (Florence), Civitaveccia (Rome) and Naples. We have seen all of Florence, so I don’t feel a need to return. La Spezia is not that scenic, so no need to stop there. We used to go visit my great aunt there and it was exceedingly dull. Cinque Terre or Siena would be my choices.
Insofar as Rome, all roads lead to Rome so you might as well go. Have you been to the Vatican museum? Otherwise pick a few monuments and eat fried artichokes. I particularly like the Spanish steps, Fontana di Trevi, Bocca della Verita, Villa D'Este.
Pompeii or Capri are nice places. You could also go down the coast to Amalfi.

Choose Mallorca, but if you want to avoid hen/stag parties, you should take into account some tips. As a bank holiday weekend groups will likely be flying out from Late Thursday/all day Friday and returning on the Monday/Tuesday. If you can fly out on the Sunday or Monday then you would be heading in the opposite direction. Also the cheaper the flight you find the more likely a stag/hen group will be on it also. If you rent a majorca car hire, there is more chances to skip stag/hen parties Enjoy your holiday
