With the holidays approaching I thought this might be helpful.
If you have bought a cake mix lately you will notice that the boxes and content are smaller. That can effect a recipe if it calls for the larger size. So here is a solution to that problem. Simple and easy.

I haven't bought a cake mix in a while and didn't realize that they'd changed. Interesting....
I really wish the shrinking of everything packaged and canned would stop! It's such a dumb and annoying game.

or you could just keep a box of neutral (yellow) cake mix in a jar and add it in to make up the difference.

Just a note Duncan Hines cake mixes are larger than Betty Crocker that's all I use when I need a cake mix anymore.

Thanks for posting this! I did notice that the mixes are smaller now and it drives me nuts. I sometimes make layer cakes for parties, etc. and one box mix won't make enough batter for a cake with any height anymore. I end up making two, mixing them together to fill my three layer pans and using the rest to make cupcakes but sometimes that's more of a pain than it's worth.

I wonder if the same thing has happened with brownies. I recently bought a very disappointing brownie mix and I did notice that the directions were different.

Tell me about it! I use cake mixes as an ingredient in lots of different recipes and almost all of them call for the larger size box mix. It's definitely a huge inconvenience.

My teen DS and I made a 4th of July flag cake off a Youtube baker's instructions. She claimed she used one cake for the whole thing and there was no way that worked out for us. I don't know how many mixes we went through for the final product but it was definitely more than one.

Just talking about this, this morning. You cannot find a full pound (16oz) of bacon, he packages are all 12 oz. The three pound can of coffee is still the same size but only contains a little over two pound.

This explains why my cake looked small in my new Wilton shaped pan. However if you're going to go through with the trouble of extending a mix, why not just make a cake from scratch? I have a great homemade chocolate cake recipe its the one from taste of home, I only used a mix because the directions called for it and I was feeling lazy and didn't want it to overflow or anything.

Then you have to buy 2 and try to measure stuff out - annoying. ETA: For instance, I have many recipes that start with a cake mix, then call for cream cheese, caramels, sweetened condensed milk, etc. It stinks when all the amounts in everything are now different.

This link may be 2 years old but I just realized the difference. I bought the first cake mix in a long time. When I got it home I thought it looked smaller, Yep!! The weight change happened and I didn't notice.

You can extend any cake mix by half with the following extra ingredients I cup flour 1 cup sugar 1cup sour cream 1egg
I've doing it for years. It will make 36 cupcakes instead of 24.

I noticed it a few years ago. I have a Cake Mix Doctor cookbook that I love (two of them, actually), and most of the recipes call for the larger 18.25 oz mixes. When I went to the store and was looking at them I was shocked to see how many weren't the right weight. Quite a few of the specialty layer cakes in the book call for you to split the layers and put filling in between, and unless the layers start out at a decent thickness it just will not work.

I do think it's somewhat of a game to mess with people. They fill cans of green beans with twice as much water as they used to. They put huge indents on the bottoms of jars and cans so there's less product. They introduce things as new and improved with new packaging hoping consumers won't notice the diminishing amounts. Obviously, they'd rather re-package than raise prices. Cereal boxes are so skinny some can barely stand. I doubt I'm the only consumer who'd rather pay more than have to be constantly surprised with smaller amounts. Sent from my iPhone
