I would buy a few small containers for fridge/freezer storage and use those, if needed. Personally, I wash out the small plastic containers that dairy things, dips, salsa, yogurt, etc. come in, and keep them for just this purpose. I also use glass or china custard cups from my kitchen, slap some plastic wrap on top, and freeze little leftovers in those, too.
Also, I’m wondering if your sour cream is processed differently from ours and is much more fragile. The expiration dates on mine are weeks out, and it usually lasts lots longer than that.

I keep sour cream a lot longer than 48 hours after opening. I have never heard that it needed to be used up that quickly. Of course I never thought of freezing it either. Good to know you can do that. Me either! I keep cottage cheese and sour cream a lot longer than that. Our local store has 10 for $10 sales once a month on the local dairy’s brand do we buy enough for the month at one time. I do store them upside down (on their lids) to keep any air out. I’ve never had any spoiled this way. They are all natural and have no preservatives added.

I don’t know the answer about only keeping things like cream for a short time once they’re opened. It would be much more convenient if I could keep them for a couple of weeks when I’d only used half of it 🤷🏻♀️ but.although they have a decent shelf life when purchased, once they’re opened it’s best to use it up pretty quickly. Who knows?

I don't throw things out by date but based on looks or smell.

Sour cream lasts forever and when it goes bad you know it. Cottage cheese can last a pretty long time too. There aren't any extra preservatives that i can see listed.
It just has a "best by" date, not an expiration date.

gar i took a pic for you. Best by date on the top, no expiration, no use by or within, do not freeze (i assume for quality issues).

I bought a bunch of mini-containers at Dollar Tree. I think they are 10-12 in a pack. My bugaboo is the remaining tomato paste after using only 1-2 tbsp in a recipe. Now I dole out 2tbsp into several mini-containers and freeze. Same with coconut milk. Always use just 1-2tbsp and need to freeze the rest. 😊

I have lots of different sized freezer cup things. I have ice cube trays, one of the flower shaped silicone molds for making baby food or egg bites (each little cup is like 4oz), ice cube style trays that have 1 cup sized wells and 2 cup sized wells. You could investigate some different sizes.
But, sour cream doesn’t have to be used that quickly and I’m not sure if it would freeze well.

Cream, sour cream and cottage cheese doesn't freeze that well gar it become watery and grainy in texture when you thaw them, You can use it in cooking after you've given it a bit of a beating but it's not really that great if you're using any of them neat as accompaniments. If you want to freeze it for cooking I would get some baby food freezer storage pots from somewhere like Amazon or Lakeland, they are pretty small or freeze them in any small containers you have now and transfer them to a bigger bag after they're fully frozen. To stop them sticking together separate the portions with grease proof paper - it's easier then to just take one portion out at a time.

I'll trust my instinct on that It could be your Food Standards Agency has more stringent rules than our four agencies that regulate food here. ?? It probably is something as simple as that isn't it Being over cautious by the sounds of it. You can use it in cooking after you've given it a bit of a beating but it's not really that great if you're using any of them neat as accompaniments. Definitely planning to use it in cooking only so that's orbit thanks, I wasn't sure. freeze them in any small containers you have now and transfer them to a bigger bag after they're fully frozen. To stop them sticking together separate the portions with grease proof paper - it's easier then to just take one portion out at a time. That seems to be the best answer I think. I could buy small bags but it would be better not to use any more plastic if I can help it. Thanks
