Without reading any of the other replies, I have two tips. 1. The fresher/younger the ginger the better. Try to find a knob with light coloured skin. 2. Use a teaspoon to peel. You can get into all the nooks and crannies with a teaspoon.

I love fresh ginger! I use a paring knife to peel it and a microplane to grate and freeze the rest. But I also keep a container of the frozen ginger cubes for when I'm in a hurry. I buy them at HEB.

With that said, my preference these days is to keep the frozen cubes from Trader Joes on hand. It helps me to get a meal on the table just a little bit faster, and I always have it when I need it. I love this stuff.

I use a teaspoon to scrape off the peel and then grate using a fine grater.

I freeze mine; makes it easy to grate it.
