The split pea soup I didn't make last night. The boys ended up going to a friend's house so I didn't see the point in cooking.
If the 5yo doesn't want split pea soup, he can have leftover meat loaf from the other night.

Broccoli, shells and cheese... basically, an easier version of baked macaroni and cheese. My kids eat it without complaint (even the broccoli)!

This cheesy enchilada rice thing I found on pinterest. I have made it 3x times now ..they like it and its fairly quick and one pot too I substitute brown rice or quinoa but I don't have enough quinoa tonight..so I'm using brown rice. I serve it with shredded lettuce and diced avocado and sour cream on top.

I think I might make Skinnytaste's eggplant parmesan, dh and the boys will want pasta with it, I'll probably roast up some cauliflower for me.

I love Yvonne's rice!
We are enjoying the 78° weather with BBQ hot dogs, baked beans, and oven baked fries.
Gotta enjoy the warm Southern California weather while we can. Big storm coming later this week that will bring snow to between 3500-4000 ft.

I made rice and bean stuffed green peppers, and quesadillas with mushrooms, caramelized onions, and baby kale. And I made avocado cream to go with it all.

Having dinner at Applebee's to support our HS band (fundraiser). Hoping I can order my 4-Cheese Mac & Cheese w/Honey Pepper Chicken Tenders even though it's on the lunch menu.

We are having Chicken breast over rice with cream of chicken soup on top of it baked in the oven. My aunt and mom used to make it when I was a kid. Saturday we were going to town and asked my daughter to come up with a meal idea for this week (we usually make a list of meals we want for the week) and she came up with this. My husband doesn't like chicken like daughter and I but he said he is up for trying it. I have only made it once in all these years and it was one time my husband was out of town. Daughter must of liked it or she wouldn't have asked me to make it again......
Hopefully husband doesn't hate it..... might have to get something else lined up in case he hates it.... maybe he can have frozen pizza (we always have at least one in the freezer)
