Hi everyone! I will be baking a birthday cake in a little while for Molly's 20th birthday ... it is on May 30th but we are celebrating today! Now don't get excited ... this is box mix cake with ready made frosting! Both dd's prefer this kind of cake over store bought or scratch. . Whatever. I hate baking but it doesn't get much more simple than this. Here is what I posted on Facebook today ... the cake will be Devil's Food Cake with whipped chocolate frosting ... Molly's request So six of us (Molly, her boyfriend, Emma, her boyfriend, Grandma and I) are going to a great restaurant tonight for dinner ... looking at the menu online I see myself starting with crab cakes and then moving to a wood fired pizza ... I'll have rechauffe for later! We will come back to my house for birthday cake afterward ... I will rope the boyfriends into unpacking my new huge standing mirror that (FINALLY) arrived yesterday ... I can't do it by myself ... been waiting for the stupid thing since November! How is everyone doing today? Are you having great summer like weather? It's about 20 degrees Celsius here and still a bit hazy because of the forest fires but overall enjoyable ... What are your plans today? What is on your menu tonight? Have a great Saturday everybody!

I can doctor up a box cake mix but I just can't even get on board with frosting from a can. leannec I'm shuddering at the thought. But kids love what they love. I've made many a funfetti box cake and frosting in my years. I've just dried my hair and Jeremy is getting ready to leave for golf this afternoon. I want to work on my quilt. But my get up and go seems to have gotten up and left. 😂 I'm going to force myself to just get going on it and see if I pick up steam. If I don't? Well then maybe I will just lay in bed and read. I told Jeremy that come hell or high water I'm making that pasta tonight. So that is my dinner plan.

I’m headed to a card class shortly. Will worry about dinner later on. Pizza? Gawd, I’m self-indulgent. ETA jeremysgirl, I’m 100% on board with you. I don’t mind cake mix (I doctor it up, too) but frosting in a tub is a hard no.

I'm a bit under the weather, but started antibiotics yesterday. So, I hope to feel much better this weekend. DH is having a project weekend, since it's a 4 day weekend. I would like to sit at my puzzle today and really, I'd like to sit at my craft desk and play w/my cricut. We shall see. I have to try and get dh to play a couple rounds of Water works (the card game), too. We're both really competetive and when he's willing to play a game it's so much fun. Dinner is rechauffe or chicken sandwiches. I'll see what dh wants to eat.

I would love to take a cake decorating class, but I would have to bake a cake in order to decorate it. Dh won't eat a whole cake by himself. When I took my cake decorating classes, they had solid hard foam shapes for us to work on, instead of cakes. Having a hard surface made it much easier to smooth the icing and to put on the various decorations. From time to time, a real cake base would be used. I like to make the cake and freeze it. Then decorate it when it is still frozen. Less crumbs and the fillings stick together. Also, as the cake thaws, it draws the flavours of the fillings into the cake & is so delicious. Today has been just glorious here - sunny and warm. After our regular grocery shop, it was off tot he hardware store for a few things for the garden. After lunch on the terrace it was time for football - last game of the season here. OMG - what a dramatic season finale. We started 2 points behind the table leaders (no playoffs here - the team on top after 34 games wins) so needed a win and for them not to win. It came down to the wire - our winning goal came 1 minutes before the end of the game. I checked my heart rate record on my apple watch after the match - for the entire second half, it was between 95 and 100 bpm! Thankfully, it has come down now.
We are going out for dinner tonight. DH wasn't home on Wednesday when it was my birthday, so we're making up for it today. We are going to a local Italian restaurant. We have been there once before, a few weeks after we moved here, and it was lovely, but we haven't made it back. I don't know what I will order - I looked at the menu, but will wait to see the specials board.

We just got back from a pretty strenuous walk ~ almost 4 miles and lots of up hills. I'm beat! We always get ice cream cakes to celebrate our birthdays. Usually Mudd Pie. Dinner tonight will be Chicken Lombardy.

(( hugs )) to anyone who needs 'em! scrapmaven....I'm sorry you're not feeling well again! I hope you have a blast playing cards with Mr. Maven! (I need to google "Water Works" ) Are you having great summer like weather? Welll...I HATE summer, so I can't call it "great". I used to sometimes take 2 showers a day in the summer (if I'd been outside a while, or swimming*, or running errands, etc) due to sweating and feeling GROSS! Then there's all the BUGS---yuck! I cannot WAIT until Fall comes back! *and as much as I LOVE swimming, I hate those days when the water is warm---ugh! Then there's no refreshment when you jump in. I'm sooo excited, because I usually have ZERO plans anymore! But I'm seeing very dear friends, and when we get together, we laugh until we can't breathe...every time! I also can't wait to *FINALLY* give one of them their annual birthday cheesecake that I haven't made for her in a few years. It's a fun tradition that I want to revive. It's my Mom's recipe and my friend just lovesss it! She loves the crust so much, she once asked if it could be thicker, so I starting using more graham crackers, sugar, and butter. There's a scrumptious pie bakery here that uses crushed macadamia nuts in the crust for their key lime pie (it is SOOO good!) Thanks to them, I started adding finely crushed nuts to graham cracker crusts (howww had I never heard of that before? ) For my friend's cheesecake this time, I used very finely crushed roasted almonds. It adds a subtle je ne sais quoi

Speaking of how every activity (and even just sitting) hurts me now, I meant to tell y'all that the pain I'm in is actually MY FAULT! ( So, I'm not seeking sympathy! ) I delayed these surgeries for so long that now I'm paying the price. I was absolutely TERRIFIED of surgery, and now here I am, in so much pain, I can barely function. I even cancelled a couple of them a few years ago---what a huge mistake!

leannec. I love canned frosting!!!! I love canned frosting, too. Betty Crocker made this dark chocolate stuff that I ate directly out of the container and I loved it. That and other reasons are why I had a weight issue most of my life.

I prefer homemade frosting but DD16 prefers store-bought - she likes chocolate mint frosting so she dumps it all in a bowl, adds a little peppermint extract, and whips it altogether with the handmixer. It's still not homemade but it's not bad.
dinner tonight is beef kabobs, cucumber-yoghurt salad, pita bread, raw veggies and spring greens, and fruit
Adding extra vegetables to my diet is messing with my blood sugar - I'm filling up on them and not getting enough carbs. I have a phone appt with a diabetes coach on Wednesday and an appt with my PCP the following week...I think we'll need to tweak my meds again.

I decided to order dinner from our favorite place for the $32 Dinner-for-Two: Selland’s Adult Mac and Cheese with spicy pork carnitas and tomato-avocado salsa. Paired with a select bottle of wine ~ Cabernet Sauvignon.

My Wheaten doodle and I just hiked the marsh. He and I are both tired. My legs are giving out on me. That stupid statin I take is causing all sorts of problems for me and I am getting rid of it. I am in great shape and walking 40 min should not hurt. The side effects are all terrible. Not happening anymore.
I am thinking about bbqing some chicken, spinach salads with balsamic glaze with broccoli for dinner tonight. I will need to go to the store sooner or later.
I needs to go back to Lululemon because I bought clothes in my normal size and everything is way too big. Ugh.

Today was a nothing day. I’ve been sitting in the deck most of the day reading. I’m getting up soon to make supper.
Summer has arrived here. The weather is perfect. I will take Walker for a walk after supper.
Supper is grilled pork chops, grilled potatoes and Caesar salad.

Baking is something I can actually do! I'm a wayyyyyy better baker than cook. Ironically I grew up on yellow cake from a box and chocolate frosting from a can, so I still love it for nostalgic purposes. I stumbled on a homemade salted caramel buttercream recipe a few years ago and now that's what I make for my family by request 90% of the time with a chocolate cake. It's yummy, but a bit of a bummer as I like to mix things up, but it's their favorite.
I actually just signed up to bake cakes for kids in foster care and otherwise at risk so I'm excited to be able to branch out a bit. And I have some serious Harry Potter and Pokemon skills for decorating!
Going out to dinner tonight with some friends - we actually have a pretty busy weekend, that kind of popped up from nowhere. Going to see my parents tomorrow for a bbq and then another group of friends on Monday for a Memorial Day/retirement party. She actually wasn't planning on retiring this year, but hip surgery did not go well and she's decided she's done.

I’ve been super busy so I’ve been mia tge last couple days. I’m doing my etching/enameling workshop with a little bit of printmaking too this weekend. I can’t believe how tired I am. I've googled and still can't find answers to WHERE all those children are now? My supervisor said they closed due to wanting more in-home foster care, but....it's hard to imagine there are enough caring homes for the thousands of babies/kiddies/teens. sueg, I’m not sure if I posted on your actual birthday. So a belated HAPPY BIRTHDAY to you now! My son, DIL, and the boys took my mom cherry-picking today. They brought me cherries and strawberries (not sure why there were strawberries, too, but whatever). So that’s what I’m having for dinner along with my take & bake pizza. Card class went well. It was really a card folio rather than the usual two different cards. I didn’t quite finish in class, but I have everything I need to wrap it up at home.

All this cake/frosting chat made me remember one of my faves--- Pillsbury or Betty Crocker strawberry cake Frosted with the canned white icing, and SPRINKLES---YUM !!!! I came so close to cancelling with my friends, but I forced myself. Even though I'd been crying and was a total mess, they are like family and it didn't matter. We also laughed a bit---I'm sooo grateful!

I like bakery cakes. I used to buy from Costco and the grocery store, but I have found a really great Bakery. As you may have figured out, I don't bake. My only interaction with the stove is, I can fry an egg, sometimes, and sometimes I have to do it twice.
