Just posted this on NSBR and thought as long as I typed it out, I'd share it here too.
Chocolate Waffle Cookies 1-2/3 cup sugar 2/3 cup cocoa powder 2 cups flour 1 cup butter, melted 4 eggs 1 tsp. vanilla. * Mix sugar, cocoa and flour. Add butter, eggs and vanilla. Mix until well blended. Drop by tablespoon on to hot waffle iron. Close lid and count to 60. (I've made these so many times over the years I can smell when they're done ) remove from waffle iron with a fork and cool on sheet of waxed paper. Repeat until batter is gone. (This recipe makes about 30 cookies)
Chocolate Icing) 1-1/2 cups sugar 6 Tblsp. Milk 6 Tblsp. Butter 3/4 cup chocolate chips 3/4 cups mini marshmallows * Bring sugar, milk and butter to boil. Boil for 1 minute. Remove from heat and stir in chocolate chips and marshmallows until melted. Beat with wooden spoon until spreading consistency. I use a tablespoonful and spread it on the cookies. Let them sit until set.
These cookies freeze beautifully and most people like them. They're kind of like a thickly frosted brownie and it's always nice to have some hidden away when something comes up. And best of all you can sit all the while making the cookie part
