I love these brownies and so does my family!
Has anyone doubled this recipe and put it into a larger pan? When I make boxed brownies I use 2 packages and bake it in a large round deep dish pizza pan. I do this for birthday's as we don't eat cake.
So, my dd would like me to make a large brownie using Kami's recipe.
If you've done this do you have any tips or suggestions?
TIA! Ginger

I have doubled it, but I wouldn't recommend putting it in a larger pan. It took the middle way too long to bake thru & I ended up with hard edges. I split them into 2 pans & switch them halfway thru the baking time. Had much more success doing it that way.
They are my absolute favorite brownie!

I didn't think about the uneven baking issue...crud. I'm really glad you responded mellyw! I wonder then if I turned the oven down and baked it longer if that would work??? Maybe I'll experiment this weekend. However, I'm the one that tried "slutty brownies" 3 times and couldn't get that to work at all!!

I agree that the recipe is so dense that it would make the baking too difficult.
We have made them for many birthdays as is and no one complains!

You know the rule. You need to post the recipe

You know the rule. You need to post the recipe I was going to say the same thing. Then I went and checked, lo and behold, there it was in my recipe folder... so here it is.
Kami's Dark Chocolate Brownies
1 cup butter, melted 1 1/2 cups granulated (white) sugar 1 1/2 cups brown sugar (packed) 1 TBS vanilla 4 eggs 1 cup cocoa powder 1 1/2 cups flour 1 tsp salt 1 cup semi-sweet chocolate chips
Preheat oven to 350F. Grease 9x13" pan (Metal is better than glass for these.).
Combine melted butter, white and brown sugar and vanilla in large bowl. Beat in eggs, one at a time, until thoroughly blended.
In separate bowl, mix together flour, cocoa powder and salt. Gradually stir flour mixture into butter/sugar mixture until well blended. Stir in chocolate chips. Spread batter evenly into greased pan.
Bake 35-40 minutes or until toothpick comes out almost clean (no liquid batter on the toothpick).
Cool completely before cutting.
Enjoy with a tall glass of ice cold milk!
---------------------------
Guess I ought to try it too. I just bought a tub of cocoa powder; thought I might use it in chocolate mousse, but ended up using chocolate chips.

Ya know, I made these once and didn't totally love them. But I think I need to give them another try. All the chocolate.

I've made them twice. The first time they were awesome. The second time, not so much. I don't know what I did wrong.

Ya know, I made these once and didn't totally love them. But I think I need to give them another try. All the chocolate. I tried them once as well, and while they were good, they weren't my favorite. I am still on the hunt for what I want to become my favorite brownie recipe of all time...and my family and friends love all the attempts.

But my new favorite recipe is the giant box of Ghirardelli Triple Chocolate brownie mix from Costco.

Lol, I have that book too...somewhere.
eta: will check to see if I saved a file with tips for making box mixes better.

My son asked me the other day why I was so intent on finding a perfect brownie recipe when Ghirardelli already did-and he was talking about the triple chocolate mix. I told him at this point it was a quest. He said that he would gladly be my side kick as I traveled throughout the kingdom of chocolate. (he mumbled something about Merry, Hobbits and elevenses and afternoon tea which I took to meant that he was good with the eating part. )

I agree that the best recipe is the Ghirardelli Triple Chocolate mix. It is my DGD's favorite and my coworkers cannot get enough. These brownies are as good or better than every scratch recipe I've ever tried!

These brownies are as good or better than every scratch recipe I've ever tried! Does the Ghirardelli mix have chocolate chips? When I make Kami's brownies, I don't use chocolate chips. Believe it or not, I don't really care for chocolate. Except for "special" times of the month, maybe 3 times a year, when I'd rip someones head off to get me a good brownie. And Kami's recipe is by far my favorite. I slightly under cook them too, makes them nice & fudgey. Oh, I've also halved the recipe & made them in an 8x8 pan. It's mostly just my DH & I now, & having all those brownies hanging around, not the best idea. But I'm willing to try the box mix. I have no problems with box mixes, if it's really good. Just won't eat them if they hve chocolate chips.

I'm not really serious about comparing boxed mix brownies to top quality homemade ones. But this is a very good boxed mix.

And thanks to this thread, I had to make the brownies last night. Dang, that one was good. I will be packing up about half of that pan and sending a care package to the 2 college kiddos. Getting close to finals time.

Not to age ourselves or anything. Funny...I just tried to "secretly borrow" my mother's old copy of Joy of Cooking. I think it was her mom's. Or maybe my dad's mom's? Either way, she has had for all of my memory. I thought maybe she wouldn't notice...but the woman has a radar that would put a bat to shame and caught me red handed. She laughed and told me that she would leave it to me in her will. Cheeky mommy. Oh, and I am almost 49, and I learned a lot of how to cook from that book...

My mom has an accordion file thing from Hallmark that she got a gazillion years ago and has been sticking in recipes that were hand written, cut from magazines, copied from friend's cookbooks...and it is like a history of our family in food. There are heirloom recipes written in the hand of loved ones who are no longer with us all the way up to current-including the kids (as in my kids and nephews.) That accordion file IS in her will-to me. (It seems kind of silly to put it in the will, but with five of us, she has made sure that even the little stuff is covered so there won't be any questions later.)

Ok, I doubled the recipe and put it into a deep dish pizza pan. When I saw all of the batter in there I scooped out enough to fill a 9" baking pan. So, I figure I used a recipe and a half, maybe a little more in the pizza pan.
I baked it at 300 degrees for an hour and 15 minutes. It turned out good. Although I think I could of left it in longer--maybe 5 - 10 minutes longer.
Anyhow, it worked!!

Whatever happened to Kami? Did she find the new board? I can't remember her Pea name.
