Tonight I'm making The Pioneer Woman's Chicken Tortilla Soup for the second time ... it was a hit with dh and I a couple of weeks ago and I found one last can of my precious Ro-Tel to use in it Ro-Tel isn't sold in the regular grocery stores here so I buy it in Washington state every summer when we are on vacation ... like I've said before ... I'm that dork in Walmart with a cart full of Ro-Tel and enchilada sauce Dd#2 is going to Grandma's this weekend so I only have to deal with dd#1 not liking the soup ... she can have a grilled cheese What's cookin' at your house?

It's dh's birthday, but we are all exhausted from this past week, so I am picking up a pizza from a place that is sort of on my way home, but not close enough to order from regularly. Tomorrow, ds' has a baseball tournament all day (for those of you keeping track, that will make 6 games since Tuesday), so we will go out for dh's birthday tomorrow. Sunday, I am back on cooking. The first full week of baseball plus dh's softball is always a tough one, plus 2 of ds' games were over 45 minutes from home!

I am doing some food prep work this afternoon (stuff to stick in the freezer,) so it is likely that I will pick my way through dinner. Among other things, I am boiling a chicken and deboning it, and the boiling the bones for chicken stock. I also have left overs from last night (biscuits and gravy,) so I will add that to the nibbles. The boy is at his dad's tonight, so it is just me-perfect time for food prep-no one standing over my shoulder trying to steal a bite.

Last night was the never ending baseball game, we didn't get home until close to 8pm; therefore, it ended up being cereal for dinner. So, tonight were having the dandelion pesto over pasta/spiralized veggies that we should have had last night.

Just back from the pub and not really up to doing anything complex - I usually prep something in advance but ran out of tine today - so it's grilled pork chops, baby potatoes and steamed mixed veg.

I don't know about tonight, but just wanted to add, last night we had the coca cola ham that's on pinterest. Actually I made my husband make it and he can barely boil water and it turned out so YUMMY!!!
So you may want to put that on some list of yours to try if you haven't already. I was going to do it in the crock pot but I think I bought too big of a ham when it was on sale so he put it in the oven.
It was great!

Well it was supposed to be grilled italian chicken sausages, peppers/onions and potatoes but the kids won't eat it and dh is starting to get a cold so I think we're just going to have scrambled egg sandwiches and fruit.

It's been a long week so I don't feel like cooking. I'll be heating up a Chicken Alfredo pizza. But last night I made Chicken Piccata that was delicious!!! I would make it once a week if my family would tolerate it.

We're having leftovers from our delicious Red Lobster carry-out last night -- baked lobster alfredo, coconut shrimp w/pineapple salsa sauce, caesar and garden salads, and cheddar bay biscuits. Couldn't eat our desserts last night so hubs has key lime pie and I'm having some kind of apple pie-like thingy with caramel sauce and ice cream. Yum!

I had a baked chicken breast with steamed carrots, cauliflower, broccoli and asparagus. I finally convinced dh that you can't put all of those veggies into the steaming basket at the same time so he waited until I got home...put in the carrots and cooked them for 5 minutes, added the cauliflower and broccoli, and 5 minutes later added the asparagus. He accused me of being "picky!" They were much better than the mush he sometimes makes He had a frozen chicken pot pie and some veggies.

We had a new floor put down in the kitchen and I have felt like crap this week, so we have eaten a lot of take out this week. I am sick of it. So, tonight we had some comfort food...Chilli Mac, corn and rolls.
