I have an open jar of pesto leftover from an impromptu picnic last Tuesday. As I was making pasta for my bow tie salad for today, I cooked up an extra box to mix with the pesto to use it up. It looks like it needs a veggie in it though. What vegetable would be good to mix in my pesto pasta? I plan to reheat it for lunch in the next couple of days.

Chopped cherry tomatoes. Or sun dried tomatoes in oil. Definitely tomatoes!

Those sweet little cherry tomatoes are the best in pesto pasta salad. Green peas are nice too.

Sautéed mushrooms, onions, spinach, peppers and peas. And put the whole pasta dish on a bed or arugula!
