I'm excited to hear about your new pressure cooker recipe. I love my pressure cooker and my new recipe last week was using my pressure cooker to make mashed potatoes. Took about half the time as normal!
Not sure yet what my new recipe will be ... Probably something to do with a roast since we have several in the freezer. :-)

I made Rachel Ray's chicken greenbean casserole last night and it was deemed bland by the family. The chicken itself cooks like a soup and w/lots of herbs and garlic. Dh said that was the flavorful part. The rest was boring. So, I'm gonna see about just making it as a soup and leaving out the rest of the ingredients next time. I'll choose a recipe and join the challenge. I like to try new recipes as often as I can, because it adds variety to our menu.

Make sure you update! Tonight dh is trying a new recipe for meatloaf. It has pork in it which sometimes makes me a bit queasy. I only used 1/4 cup butter, added some sliced carrots, and covered it with foil, but otherwise followed the recipe. Family declared it a KEEPER! Cooked pork is okay, but there's something about the smell of raw pork. I always think it smells like it's bad.

I made a beef roast in my pressure cooker for the first time. I put the thawed roast in the pressure cooker and added 1 cup of beef broth, 1/3 cup of balsamic vinegar, 4 chopped garlic cloves, 1 Tbsp of worcestorshire sauce, soy sauce, and honey. Set the time for 70 minutes. It was great - shredded easily and was great for sandwiches. I had it with mashed potatoes, and a vegetable, but my daughter had it on a bun and had seconds. I'm starting to get a little more brave with my pressure cooker. I'm thinking that one night this week I'm going to try making spaghetti where you cook the noodles in the pot. I've done one pot spaghetti on the stove and it was great, so I feel pretty confident I can do it with the pressure cooker. I'll just have to look up the timing for cooking spaghetti noodles.

We just sort of posted last week's recipes on the long first thread that was asking if anyone was interested. I decided to take over starting weekly threads for a while. It is hard to keep reading mega-threads, especially if you want to search for a recipe, so I thought weekly threads would be easier. If AussieMeg wants to take over, that is cool with me.

I don't see why the chicken and beans couldn't be prepped and refrigerated before, but the potatoes might turn brown. He could add them or maybe frozen potatoes/hash browns would work. I've never used frozen potatoes so I don't know. My only experience with frozen hash browns is in funeral potatoes.

I didn't make this, but I ate some last night at a friend's and it was really good: the crock pot peach cobbler recipe that involved a cake mix, peach pie filling, butter and pecans. Don't know the details, but with vanilla ice cream? Yum!!!!!
