Why haven't I noticed this thread before? Maybe because I didn't have a pressure cooker or other similar appliance. But no more! One of my neighbors was selling a brand new Instant Pot still in the box for a steal, so I snapped it up. I made the absolute BEST potatoes tonight (I apologize if this is a repeat that someone else may have posted in earlier threads, but I'm just so happy to have gotten this and this recipe was easy and so so good) Roasted Potatoes in the Instant Pot4-5 Tbsp. Vegetable Oil 1-2 lbs (500g - 1k) Baby or Fingerling Potatoes (however many will just cover the base of your pressure cooker) 1 sprig, Rosemary 3 Garlic Cloves (outer skin on) ½ cup Stock Salt and Pepper to Taste INSTRUCTIONS In the pre-heated pressure cooker, add the vegetable oil. When it has heated through add the potatoes, garlic and rosemary. Roll the potatoes around and brown the outside of the raw potatoes on all sides (8-10 minutes). Then, with a sharp knife, make a small pierce in the middle of each potato (do not stir the potatoes, anymore). Pour in the stock. Close and lock the lid of the pressure cooker. For electric pressure cookers: Cook for 7 minutes at high pressure. For stove top pressure cookers: Turn the heat up to high and when the cooker indicates it has reached high pressure, lower to the heat to maintain it and begin counting 5 minutes pressure cooking time. When time is up, release pressure using the Natural method - move the pressure cooker to a cool burner and do not do anything, wait for the pressure to come down on it's own (about 10 minutes). If the pressure has not come down in 10 minutes, release the rest of the pressure using the Normal pressure release - push, twist or lift the button or valve to release pressure. Remove the outer skin of the garlic cloves (and serve whole or smash, to taste). Then, sprinkle everything with salt and pepper to taste and serve! WELCOME, BF!!! You will love love love your instant pot. Just wait until you adapt your Italian Beef recipe for it and discover how good AND quick your instant pot will do it. I rarely buy soup any more because I can make 2 quarts of fresh soup in 30 minutes or less in mine and it tastes so much better than canned stuff with all those additives. I'll have to try your potatoes - we haven't had that recipe posted yet. ETA: we have a couple of people who just recently got their pressure cookers, so don't be afraid to ask anything. I've seen plenty of pasta recipes with sauce. I wanted to try just plain spaghetti for my picky family. Based on what I've read, I broke half a box of spaghetti in half, put enough water in to cover and added a bit of oil to prevent foam. I set it for 6mins on high pressure.
Perfecto! Talk about set it and forget it. It's silly to think it could be easier than boiling a pot of water and putting noodles in. There was no boil over, no film, no nothing. It just beeped when it was finished.
I have two inner pots so I did some jarred sauce and frozen meatballs first (3 mins high pressure) and let them sit while the pasta cooked. the sauce did need to be warmed up a bit but I would call it a success.

I love that you already have a second inner pot, Jenjie! One of my pressure cookers was a rice cooker tonight and my Instant Pot has a big pot of fresh goat milk yogurt incubating!!! I'm so excited because our local Whole Foods began carrying fresh, NON- ultrapasteurized goats milk. The VA laws must have changed. Anyhow, I bought a half gallon yesterday just to try making goats milk yogurt. I am ordering more goat cheese culture to get back to goat cheese making!

I'm sure reading this thread with envy! My I-pot is some 3000 miles away while I exist on semi fast foods or the occasional meal I make while imposing on the relatives I am staying with for the next month. So I will have to bookmark these yummy tidbits to try once I go back to humid-ville. (Although I miss my DH, the kitchen and its' gadgets, I am loving the non-humidity of my home state, the availability of lots of good produce, and the cold rain)

I made ribs and baked beans last night and they were great.
Someone posted ribs on here a few weeks ago and they are on sale here. Its the third time I have done ribs now (we don't normally eat them this much!) and I think this batch needed five more minutes as they were quite large. I can fit two racks in and 35 minutes, throw them on the grill for 5. So awesome.
The beans were fantastic too. I did 10 minutes presoak for the navy beans under high pressure with quick release and they were like I had soaked them all night. I never remember!

My goat yogurt is a hit! It is much runnier than cows milk yogurt, even when strained, but tastes great - like a cross between yogurt and goat cheese. My younger son had a bowl of it swirled with strawberry preserves for breakfast.

I love how wonderfully easy beans in the pressure cooker are. Over the years, I think I've used it most often for making unsoaked dried beans.

I just made this for lunch! DS#2 and I had big bowls and cheese bread on the side. I substituted coconut milk for the half- and-half, and used 3 cans of diced tomatoes, instead of fresh (will make again with fresh this summer).

Thanks for the thread!! I just broke down and ordered the insta pot. I had gotten an PC from Sam's Club on their pre-black Friday sale but all it did was make me want a better one. Thanks to your weekly threads I was able to see that the insta pot would be a better fit for me.
I can't wait to try yogurt!! I ordered the insta pot through my daughter's Amazon prime account so that I could get the free 2-day shipping. She's already asked me to make yogurt for my grand-daughter, Emma. Emma loves yogurt and I do have a BUNCH of strawberries left over from Mother's day when we went to a local farm and picked way more than we needed.
Any suggestions for a good cookbook or two? I don't eat a lot of red meat but the rest of the family does. We love Greek, Mexican and Italian foods. I would LOVE a really, really good recipe for chicken tamales. I love chicken tamales and can't really get them anywhere close to home.

My favorite cookbooks are these two, although I also go to hi-pressure cooking.com and pressurecookingtoday.com for recipes: Great Big Pressure Cooker Cookbook (the authors of this one have a class on Great Food Fast
After you get the hang of it, you should be able to modify some of your regular recipes to work in the pressure cooker. oh yvonne, may have some tamale recipes - they are supposedly superb in a pressure cooker - I haven't tried them yet, but maybe soon. My kids love them, as do I!
