Hi Gang!
Tonight was a simple gadget meal - I just used the pressure cooker to cook corn on the cob. My husband is a total complete corn on the cob snob - very picky as to how it is cooked and definitely NOT over-cooked - and he loved it. 2 cups of water in the pressure cooker, then a steamer basket/trivet, then the corn. High Pressure for 2 minutes then quick release - perfect corn! No heating up the kitchen with steamy water waiting for it to boil.
Last night, I made another pot of poached pears, using 10 small pears. My younger son has decided that diced cold poached pear is his favorite breakfast.
I had to get a new Air Fryer for Mother's Day. My QVC one fell off of the counter - we don't know how as we were upstairs in bed reading - and shattered. I went ahead and bought the Philips XL one because we really did need a bigger one. It arrived yesterday and was used for bacon this morning - thumbs up!

I was going to use my iPot for honey garlic chicken. But instead I made 10 casseroles – five for me and five for a friend whose husband just had a liver and kidney transplant. I end up cooking and eating one of the casseroles for dinner since I had spread out so much getting them all ready. So tomorrow I will pull it out and get to use it again

I was gifted an Instant Pot for Mother's Day and while I may not be able to share any great recipes just yet, I must say I am so happy to have these threads! I've been reading some of the past ones to help me learn how to use mine to its full potential. I did make chicken and yellow rice in it yesterday. The rice came out a little mushy, so I plan to reduce the liquid next time. The chicken breasts, however, were AMAZING. I seasoned them with salt, pepper, poultry seasoning and crushed chicken bullion. They were melt-in-mouth tender and had so much flavor. I did mashed potatoes tonight and they came out okay. A little thin so again, I'll be reducing the liquid on the next attempt. I plan to do a pot roast with potatoes later this week so if anyone has done that and has any advice, please share! L

I haven't had much luck with my IP this week. My first batch of yogurt came out quite runny, even after straining. I used a different starter yogurt so I'm assuming that was the problem. It's still edible, but just not the thick, creamy Greek yogurt I love. I tried again yesterday and after 5 hours, realized I hadn't put any yogurt in it at all. I was just incubating milk!!! Third time lucky starting tonight!
I've also found a recipe for cheesecake that I'd love to try, but I really don't need a cheesecake in the house!
I'm not working this week so I have some time to play around with it. Hoping to discover some good, quick recipes:)

I've been making sides/snacks in the instant pot this week!
I made elaine's southern style green beans, and the family loved it!
Yesterday, I made mashed potatoes for the first time and they came out perfect. About 2.5lbs of quartered russets with 1 cup of water. 8 mins at high pressure. No draining, just added cream/butter/salt/pepper. Fantastic!
My first yogurt attempt was just ok. Not thick enough. I'm going to try a recipe that adds powdered milk to thicken.
I really love how easy and PERFECT hard boiled eggs are in this thing. I do them for 6 minutes. I can not believe how the shell slides off every single time.
I really think I'm going to love this thing in the summer - grill meat, and make sides in the IP without steaming/heating up the kitchen.

Hi Ladies!
For yogurt making, I highly recommend Tidbits recipe, the one that uses the powdered milk. I've made gallon milk sized batches of yogurt about 3 times now and it comes out every time. I buy whole milk, Chobani plain as my starter. I just use the machine as directed, do the "scalding" first, let it cool so it's barely warm to touch (I never use a thermometer), then yogurt function for 8 hours. I've done 6.5 hours, but I got too much whey. 8 hours is perfect.
We used the IP this weekend at a family BBQ, we made a whole rack of pork ribs that had been dry rubbed over night. My brother finished them off on the grill and they were perfect. My family was so impressed with my IP I left it at my parents house so my mom could try it this week to see if she likes it. Wahh..I miss my IP! haha
Last week I made the potatoes and eggs for potato salad..oh gosh, SO easy! Peeled the potatoes, cut up, eggs on top, some water at the bottom and steamed for about 20 minutes I think it was. I forgot to put the sealer ring in it prior, so it never came to pressure, but dang it if everything still came out perfect.
I ADORE this pot.
I tried making arroz con pollo last week, but I cooked it too long on manual setting and the rice came out too mushy. I think the key is to remember to set the timer to cook the rice, not the chicken. So, next time I'll make sure the chicken is a little more browned/cooked first, and then add the rice and set the timer to the 'rice' function. I don't use large pieces of chicken so they should cook fine in that amount of time.
I still haven't tried a cheese cake yet, too lazy and gah, the calories!

I made a chocolate brownie cherry cheesecake. It was awesome. I also do not need cheesecake in the house though, so I am not making another one for a while. I made risotto last night and it was great. I sauteed cubed sweet potato, mushrooms and onions, two cups arborio, 4 cups broth. 7 minutes high pressure and quick release. PERFECT! No more risotto stirring! Threw in a tablespoon of grated parm at the end. I didnt have wine but it wasnt really missed. I made chili last night too but i just packed it up for dinner tonight. Looked good.

I too made ribs in my pressure cookers last night. Given my family, I actually made 2 full racks - 8 pounds - so used both my pressure cookers. I probably could have crammed it all in my 8 quart, but didn't want to risk having $25 of ribs not turn out well. Finished them off in the oven - 30 minutes at 450. They were so awesome! Yum! I've never succeeded in fall off the bone ribs before.

You ladies are such an inspiration.
It's summer now so my go to meals are usually a meat grilled outside, a tomato onion and cucumber salad and corn on the cob. I'm lazy so I throw my corn (husk and all) into the microwave for 4 min/ear. Perfect every time.
Can't wait to try these recipes when the weather becomes cooler again.

I bought the push up pan on Amazon, but after reading some more I guess I could have bought it at a craft store-I may buy another one so I can make more than one type! I am hosting a book club In a week and a half and am considering making mini cheesecakes in mason jars and having toppings out for folks to add to their cheesecakes. Need to get some mini mason jars for that!

I know this is a long shot, but has anyone made Japanese or Oriental sweet potatoes in a pc? They have the texture of regular white potatoes so maybe I should use the procedure for those? I would prefer to peel it first, then bake, but could do it the other way if it's better.

Yesterday, the instant pot was busy making yogurt.
For dinner last night, my other pressure cooker was busy making Chicken Tikka. I added too much coconut milk this time and it was a little too soupy - I will remember to watch that again next time. I did have to get out the rice cooker as my other pressure cooker was making yogurt. LOL!

We had a crazy schedule last week so ended up with a lot Of fast food in the car. Yesterday I made myself a baked sweet potato in the IP. So tender. Yum. I want to say high pressure 16 - 18 minutes.

I made baked salmon for the main course tonight (with a dill sauce), wild rice, and my pressure cooker green beans as sides for dinner. DH actually drank the "juice" from his bowl of green beans when he finished!

Last night I made Zuppo Tuscano copy cat for dinner. It was delicious. I made a few changes. I used chicken broth and not water. I also only used 8 cups and did not add the extra 4 called at the end. There was lots leftover to freeze in individual containers to take for lunch.. Zuppo TuscanoIt was a total gadget meal. Soup, salad with dressing made in my vitamin and crusty bread from the bread machine. Tonight I made honey bourbon barbecue wings. They were series Yum! Contrary to what seems intuitive, too much starter makes for runnier yogurt. You need the starter to eat lactose from the milk you have heated in the pot, and too much starter won't eat as much lactose. I don't use a recipe any more, but I've been making yogurt for years now. For 1 gallon of milk, 1/4 cup of plain starter yogurt is all you need. My favorite starter is Walmart plain yogurt, with trader joes as a close second. Both are better, IMO, as starters than more expensive brands like chobani and Fage.

I have been putting my pressure cooker on our covered deck lately since its been warmer here in WA state and I don't want to heat up my kitchen. DH made wings, he pressured them in hot sauce and then finished them off on the grill. (I didn't try them) I made bone in Teriyaki chicken for 25 people a week ago. I pressure cooked 3 batches of chicken in teriyaki sauce for 15 minutes then finished them on the grill. If you haven't tried this put it on your list of must try's. Last night I made meatloaf and potatoes. I don't have a pan for meat for my pressure cooker so I used foil and put the loaf on top of the potatoes. Tonight I made stew. Feels good to be using it so much. I cant wait to try it on corn on the cob. Aka I can't wait to eat fresh corn on the cob.

2 nights ago I made pork carnitas in the IP with my son. They were super tasty (but I added too much Sazon and they were SPICY, but delicious!) we also used the IP to make lime cilantro rice so it got double duty that night!.

Monklady...get the Instant Pot! They have a great community group on Facebook too. Several of us are on that board as well.
Jumperhop, the bone in chicken teriyaki sounds so good. Do you use breasts? And what is your teriyaki sauce recipe?
