Hi everyone! Well, my fun news for the week is that even my 81 year old mother bought an Instant Pot because she wants to make yogurt at home. She called me yesterday (we live 3000 miles apart) for tips! LOL! For me, today was yogurt in one of my pressure cookers and corn on the cob in the other for dinner. The yogurt is straining now. A tip that I picked up on one of the pressure cooking blogs is to purchase one of THESE. It really makes dealing with a hot inner pot much easier, especially if you need to pour liquid out or want to move the pot quickly out of the cooker so that it cools. It is easy to use and really works well, even with a pot full of soup.

My only contribution to this thread -- for today anyway -- is that my pressure cooker arrived today! woo-hoo! Haven't opened the box yet because I'm too tired. But it's on my plan for tomorrow.

Has anyone ever made pulled pork sandwiches in their pressure cooker? I've made them in a crock pot many times, but we thought we'd give this a try this weekend. Yes! I use the same seasoning packet + ketchup + brown sugar that I use in the slow cooker. Add 1/2 cup of water. 50 minutes on high pressure for a butt roast. Quick Release. I then use my bear claws to shred. Perfect!

Last night was a 2 pressure cooker at the same time night. I did 2 racks of ribs in my 8 quart cooker - yes, two full racks of St. Louis style ribs fit in the one cooker. Last time I split them between two cookers, but I decided to try them in one. I did cut them into thirds and them stood them vertically so that all of the could cook evenly. I finished them off under the broiler. The bones were literally falling out of them. OMG! I also made my Southern Style Green Beans in the other cooker. Even the dog ate a few. What is everyone else cooking?

I had made the cheesecakes already but we didn't eat them until last night at book club. The mini cheesecakes in mason jars were adorable, but I preferred the taste of the slices (same recipe, different presentation). I will say for a small gathering they were perfect because they were premade and I put the lids on them when they were still warm so the lid sealed on and everyone liked they they had to use a can opener to get them open. I had caramel and hot fudge, homemade whipped cream, cherries, and strawberries so each person could add the toppings they wanted. The key lime cheesecake was amazing-I have never been overly a lime fan in desserts but it was really really good! The only other plan for using the iPot this week is Friday for fried chicken-I think we are going to pressure cook it first and then fry it with waffles.

I tend to forget about dinner so the idea of cooking in less time is appealing but if it's just going to be one more appliance to spit out flavorless and/or burnt food I'll save my $100 to spend at a restaurant

My plan is to look through the cookbook tomorrow and then go to the store and buy a few things to try out. I'm thinking I might start with some kind of soup that involves beans, because my husband is skeptical that beans will only take such a short time. I asked him if he thought all the people in these threads were just making it up, but he still shook his head. So since he's out of town I'm going to try it first. lol. (because there's still a possibility of user error, especially from me...so I don't want my mistakes to cause him to think he's right).

I used boneless ribs for pulled pork. It was so easy and good. I shredded it in my kitchen aid and added bbq sauce

We were away Thursday-Sunday afternoon, so not much to report.
I did make black beans - dried to done in 60 minutes! I added some of Penzey's dried jalapeños and they are nice and spicy.
I made and canned strawberry preserves on Sunday - just used my water bath canner - and my younger son is ploughing through the yogurt with the fresh strawberry jam. I'll make more yogurt in the IP tomorrow.

I'm making chicken stock in my electric pressure cooker right now from a leftover roast chicken carcass. I'm going to make chicken and vegetable soup for DD, who has a summer cold.

Hey hey hey I made cheesecake yesterday! I wondered what all the hubbub was about. Oh my word. So so easy. And so creamy and tasty. I did the NY style cheesecake with. Ginger snap crust. This is what I'm making tonight! My very first pressure cooker meal. eek... Going to the grocery store now. My cooker arrived Thursday & I made several things over the weekend. I made potatoes & hard cooked eggs for potato salad (perfect), pulled pork, steel oats, and a smoked sausage penne pasta dish. Tonight I'm going to try corn on the cob. I am tickled that there are more people joining our ranks of electric pressure cooker cookers!

I think pulled pork, Italian shredded beef, or ribs are all great meals. Or, you could make beans, put them in a casserole and keep warm in the oven, and then make shredded Mexican chicken in it. Also make some rice (you could do it in the pressure cooker too, but stovetop is fine) and then make burrito bowls. That is what I did for dinner last night.

32 more minutes and my pork will supposedly be done (plus de-pressurizing time). lol. Even in the face of all of you who have been using this cooker for a long time, I still have a hard time believing it! lol at me.

I'm not feeling well today - stupid summer cold! Not really in the mood to go to much trouble for dinner tonight, so I went the easy route.
Browned a pork loin with garlic, doused it in balsamic vinegar and maple syrup and set it to cook for about 35 minutes. When it's done I'll toss a bag of pre-washed cauliflower, broccoli, and carrots in the microwave and call it dinner!

I probably need to buy a pan/something to set down in the cooker since I suspect it doesn't just go directly into the stainless bowl. So tell me what I need to buy for that also. I have the springform, but I know that others have just purchased the kind with the bottom that pushes out. I use the cheesecake recipe in The Great Pressure Cooker Cookbook. The authors also use that same recipe in their Craftsy electric pressure cooker class and it gets rave reviews. But, since cheesecakes are really foolproof in this appliance, there are quite a few different ones. Can I just say that I am so happy that you took the plunge? I've been checking the board for the past hour or so to see how it turned out and what you thought. There is no looking back now!

I haven't gotten too adventurous with mine yet but I've done a few things. I've made Chicken and Yellow Rice about 3 or 4 times. Comes out amazing and is so much easier than my old way.
I tried meatballs. I couldn't find instructions on how to cook mini-meatballs, only big ones, so I had to guess on the time. They came out okay. Seemed to be less flavorful than baked in the oven. Also, I had a bit of 'meatball monkey bread' thing going on (I make the minis, so I stuffed liked 79 meatballs in there!). I will have to tweak the cooking method on this one.
Corn on the cob was awesome! We like ours soft, so I did 5 minutes on high pressure and they were perfect. Again, so much easier, faster and way less mess.
I made a roast and while it was one of the best tasting I've ever made, I also made a ginormous mess. Added way too much liquid and it spewed like a volcano when I quick-released the pressure valve. Shocked the crap out me, so I just stood there like a dummy watching it for a bit until it dawned on me to grab a towel. Oh, what a mess!
I did not like my mashed potatoes in the IP, however. I must've put too much water in the pot because they were so saturated, I couldn't add much milk so the texture was way off. Very grainy. Again, I will have to work to tweak that.
So, some successes and some not, but overall I love this thing! I'm itching to do ribs. That's normally an all-day thing and the thought of being able to make ribs in just a few hours is thrilling to me.
