I ended up having salmon, too. Cooked in the oven because BIL wasn't there. It was delish ... my sister always does a good job with salmon, which is normally not really a favorite of mine. Plus corn on the cob and green salad. There was bread but I didn't eat any. I finally this afternoon made the lemon blueberry pound cake I've been threatening to make for days, and took that with me. Also very delicious.

I made a glaze from one pound of powdered sugar (also called confectioners sugar here ... I think it has a different name in Europe) and the juice of three big Meyer lemons. I drizzled the glaze over the individual slices instead of the whole cake. It was kinda perfect.

Well, today's dinner was just Mac and Cheese but I did meal prep for the beginning of the week. I make a new to me casserole from Pinterest, chicken Parmesan casserole. Then I made a crockpot meatloaf and some mashed potatoes & corn. With leftovers we should get 3 days out of those 2 meals. So I'm happy the beginning of the week is all taken care of. My husband hates when I spend Sunday's cooking but he can't eat it until Monday! LOL. It did smell pretty darn good in here all day.
