Maybe it depends on the grade level. The way my hs works is that the last week is 3 days long. Monday and Tuesday are finals, Wednesday is check out. I could see missing check out day if necessary, but if you are gone during the final, who is grading them?
Plus my students get participation points. Why should they be expected to attend class if I am not making it a priority?
Having a sub is 3 times the work of me being in class teaching and I still can't be sure that the students are getting what I wanted them to get.
I had to miss a day in December due to mandatory training. My students missed that day of having me as a resource for their paper and their project and it put them behind. We caught up, but it would have been better if I had been there.
No sub, no matter how detailed my sub plans are, can do as good or better job than me.
That doesn't mean I don't take days off if I or my kids are sick. I've taken a day to extend a weekend here and there.

In my district, we do not get a choice. We get paid over 12 months. Even though I have already earned all of my money for the year, my district gets to keep a chunk and dole it out to me slowly over the next three months. In other words, they get to earn interest on it – I do not. I would much rather have my money as earn it. I am a grown-up. I can handle my own finances. And I would like to earn interest on the money, thank you very much… FYI..this might be illegal with the IRS... every district I know pats their certified staff this way. Some allow classified to choose it as well. It is part of my contract. I know that my salary will be divided by 12 and that is what I will get paid each month.

When I was hired, 10 months of checks was an option, you could also choose 11 checks or 12 checks. Hell yes I took the 10 check option! Then they changed it to 11 or 12. I changed to 11. I don't get a July check.
