Last night was leftover pizza night, because we had tons of it from a mini-basketball game party that youngest ds had when his buddies came over to watch the game on Sunday. Tonight, I'm not sure who will be around for dinner. I'll cook something, but not sure what that something might be. Right now I'm off to the DMV for a dose of apathy and bored employees. Envy me.
What's on your menu?
Have a great Tuesday everyone.

Ooooh good luck at the DMV scrapmaven One of my least favorite places on the planet! Tonight's dinner is garlic & mozzarella chicken sausages for most of us...ds will eat a hot dog. I think we'll have rice and broccoli with it.

I'm trying a new crock pot recipe for burritos. We will see how this turns out. I tried one for tacos in the crock pot and that was a big hit, so I am hopeful. Chips and salsa to go with it.

The dd's will complain but we are having chicken "We always have chicken!!!" is what they say ... well, dh and I like it and it is good for you I'm going to get dh to grill boneless skinless chicken breasts that have been marinated in a homemade Greek marinade ... I'll serve them with The Pioneer Woman's Buttery Lemon Parsley Noodles and some fresh veggies of some sort

Well, if we have company tonight it's going to be a Hawaiian/tropical grilled chicken and rice!
If it's just me (kids are at camp and hubby out of town) I'm going to have a caprese salad made with fresh (and perfectly ripe) peaches, fresh mozzarella, my garden grown basil, drizzled with lemon infused olive oil and some yummy garlic balsamic from the farmers market!!!!

My refrigerator is still not working properly and is never below 40-degrees. I can keep the temperature around 40 only by adding 25lbs. of ice each day. So basically, all my food is stored in a giant cooler. I've never been particularity fond of picnics or camping. Just sayin' Tonight's meal will be tuscan tuna salad (because it doesn't use mayo) in nice looking buns/rolls I found at the bakery, roasted tomato soup (freezer), leftover cucumber-tomato salad, blueberries and grapes (because they are less perishable than other fruits), and cheese cubes and crackers.

When I left the house this morning I'd got as far as getting chicken breast out of the freezer, then a recipe popped up on Pinterest that I think I'll make - one skillet chicken with fiesta cream sauce, I figure I can use Greek yogurt in place of the cream - right? I'll probably make a double recipe of steamed rice to go with it (and have leftovers for tomorrow) plus broccolini and yellow squash.

Busy day today so I've planned my day with a stop at Costco at dinner time. So after picking up what I need, we'll have a brat and a cup of ice cream with berries.

Last night I made a big pot of my Mexican-style chicken and veggie soup. So I'll be eating that for a few days. My sister is coming over tonight to watch Endeavour and I'll feed her some of it.
(And yes, yes, it's in the 90s here this week. Why do you ask?)
Totally soup weather. Right?!

Dinner is OUT tonight! DS is taking DH out for a belated Father's Day dinner and I was going to stay home and let them have some alone time together, but now DS has invited me too but I'll pay my own way. Then again, I may stay home and eat those homegrown tomatoes and Garlic Naan bread that are calling my name...and oh yea, that bottle of Watermelon Margaritas that still has one or two drinks left in it.

I went to pull out the meat to cook last night @ 7 p.m. and discovered that it was a roast! I thought it was sliced into pieces so that I could cook it on the stove top. So I will toss that in the crock pot in a bit. Last night, I shredded rotisserie chicken into a salad with feta cheese, a few almonds and dried cranberries and poppy seed dressing and called it good. Oh, and a nice pat on the back for me. I have finally learned how to spell "rotisserie" with looking it up! Ha! Lisa

Tonight is "throw everything in a pot and hope for the best", and it turned out really tasty. Both DD and her friend ate a lot, so I consider it a success. DH and DS won't be home until late, so they can either eat the leftovers or make themselves a sandwich. And my rhubarb harvest is in the freezer! I predict a rhubarb pie in my immediate future *yummy!*.

After defrosting/cleaning out one freezer, we've come across bits and pieces of leftover stuff, sooooo tonight it's fish sticks, tater tots, brussel sprouts, and succotash. Fish sticks and tater tots... about the only conveniences foods we do and half the time forget they're there! lol

DH had picked up some hamburger meat yesterday while shopping so he made hamburgers for today and for another meal later this week. He fixed me one with cheese inside but we didn't put enough cheese - next time just add it after cooking. Didn't have time to do fries so we had chips and pickle. Oh, we topped our hamburgers with one of our home grown tomatoes - nothing wrong with that.

Something involving a chicken breast. I just remembered that I can make a white bean salad.
Thanks for the thread! It really got me thinking today. I have done a poor job planning my week's menus.

DS went wine tasting with friends who have a shipment of wine to pick up in Napa so I'm not sure if it's going to be just DH and me or not. Maybe some ham, potato salad and a green salad. We're off to the movies in a bit so I'll decide when we get home.

We are having Thai Green Curry Chicken, brown basmati rice, naan, and a vegetable of some sort, maybe carrots. And yes, I know my dinner is culturally incorrect since naan is Indian and the main dish is a Thai curry.

This morning I was at Aldi and picked up cantaloupe, honeydew, blueberries and peaches; I'll make a great fruit salad for myself. For DH I'm making a rice/chicken/broccoli casserole.

Panko crusted salmon and grilled zucchini for us. We're using the first zuke we got out of our garden, and it's a monster! That sucker weighs 2 lbs. and is about 15 inches long. I'm using its smaller 1-lb sibling to grate up for zucchini bread.
