Tonight I'm going to make the cauliflower pasta that I was going to make a few days ago. That dinner turned into garlic chicken and brown rice sautee. Salad will also happen.

Dinner was (it's nearly 6 pm here) baked salmon, potatoes and salad. And strawberries for dessert.

Marinated chicken breasts that I bought yesterday - more cutlet thickness than breast. Teriyaki, Chili Lime, Roasted Garlic, and Greek. I bought a Greek one to try the last time, but guess which cutlet was dropped on the driveway. :-( We will have the pasta salads I bought yesterday and we will suffer through the corn, which was the worst we have had this year. I cannot wait another month for local corn to come in.

Didn't get a chance to weigh in yesterday on the 4th, but we had 4th food and all that that implies....
I'm heading to our local aquatic center with my 15 year old niece to spend the day, so tonight, we're doing what I call refrigerator stir-fry.....chicken stir-fry made with whatever I find in our veggie crisper. It's easy, quick and healthy and I've got to admit that DH and I do a pretty damn good stir-fry.

We are having leftovers since there was so much food yesterday. My favorite dish was this Baked German Potato Salad. Awesome! It's been added to my recipe file because it was a big hit, even with the non-potato lover in the family. There is just enough left for one more meal.

Probably leftovers of stuff we had over the weekend. I am REALLY tired of cooking at the moment. In addition to stuff I made for meals over the holiday weekend, I sent DS back last night with a huge container of tofu fried rice and 8 frozen black bean patties, so that he has some easy meals on hand for the next couple of weeks.

We're on vacation next week, we leave ridiculously early Saturday morning. After work and swim class, somehow between now and then, I need to run about 57 bazillion errands to buy all the crap we need to take with us. With that said, this week is going to be yet another week of quick easy meals, starting tonight with tacos. I bought a bag of Trader Joes frozen langostino tails, having no clue what they were but thanks to Pinterest learned you pretty much use them in place of shrimp. So, maybe it will be langostino tacos.

We're having a replay of yesterday's Fourth of July meal - hamburgers, hot dogs, mac and cheese and green beans. Thanks to DD, there was no pasta salad left. I think she ate at least half of it herself.
Still have some watermelon left, too. That's my favorite part of summer - eating juicy, drippy watermelon!

Thanks for reminding me that I need dinner plans! Everyone seems to have lovely meals planned. I'm trying to clear the refrigerator, so I could go to the farmers' market, but it may be best not to. I think I will bake some cod with zucchini, olives, and sun-dried tomatoes. I'll steam some rice, and I have green beans. Yay! Dinner solved!

Had my semi-annual eye appointment this a.m. and was given the news I already knew that my peripheral vision had deteriorated more so I'm not depressed just not happy.
Came home and DH fixed hamburgers; then he got sick after lunch and went to bed. I'm sitting here myself in a funk.
The hamburgers were probably good but I wasn't that hungry.
