Thank you so much for always being so generous with your information and responding to our myriad questions! I am really excited to make Greek yogurt, even more so now that I know that I don't have to dirty up a bunch of jars! O e more question, if you don't mind, how do you know what is good to use for a starter. We have a place here called Ellenos and they have amazing yogurt, but it is super expensive. I buy some every few weeks for a snack treat, but it is too expensive to use in smoothies. How can I tell if that would be a good starter?

As long as the yogurt has live cultures in it, it should make a good starter. Just as them if their cultures are still live - they most likely are. I have tried a variety of yogurts as starters over the years and believe it or not my favorite is Walmart plain Great Value yogurt. It consistently makes thick tart smooth yogurt. And I've tried Fage, Chobani, etc. Trader Joes plain Greek is good too, but Walmart's is my favorite. Your milk will also impact the finished product, but not as much as the cultures in the yogurt starter. Our favorite is to buy grass-fed milk at Whole Foods for a treat - it is naturally a little sweeter than regular milk. And try to stick with 2% - the others produce yogurt that is not as good, but as you gain experience you should try what interests you.
