Tonight I'm seriously contemplating PW's skillet chicken lasagne. It looks really interesting and I think everyone will enjoy it. I do need to go out and get ricotta cheese and then I am set.

I bought that rotisserie chicken last p.m. and will be making the Tuscan garlic chicken. I actually remember all of the ingredients and am not even going to bother looking up the exact recipe. Living realllllllly dangerously over here! As an aside, I enjoyed "The Secret Life of Pets" with DS2. Very cute movie. I brought home an extra bag of popcorn, which I am sure is a huge surprise. Leftovers of the Tuscan Chicken Pasta from last night. I posted the recipe on yesterday's thread earlier today. It feeds the 3 of us for 2 dinners, and there will probably still be some leftover!

Glad you liked the movie and that you got one of your boys to go with you My littles really liked it!! I can't decide between sloppy joes or chili. I'll probably make cornbread to go with either one. Also roasted veggies. All depends on if the sun comes out or not. It's grey and a bit chilly out at the moment. That could change at any time!

We're having meat loaf w/topping, homemade mac and cheese, succotash, and homemade applesauce... all of which, except the limas for the succotash, is thawing as I type. I just love freezer meals! Fruit for dessert.

We are having Chicken Italian Sausages with green peppers and onions. And sliced watermelon. DH is grilling and I've already sliced the watermelon, peppers and onions, so my contribution is over.

We were planning chicken breast (baked) with rice but dh spent 4 + hours working outdoors in 90 degree heat at his nephew's new house. He's wiped out and I told him we should order out.

I really need to clean out the fridge and i think I can put together a decent casserole with what's in there. I probably make a chicken/broccoli/rice casserole. We have plenty of fresh fruit for dessert.

I've been away from the thread for the past couple of days because I've been "Stampeding" ... spending time at the Calgary Stampede After two days of midway food it's time for some real stuff so tonight I'm making ribs in a tangy sauce with mashed potatoes and tossed salad Here is me and dh in our annual Stampede selfie

We are going to have rice and chicken tonight. With steamed broccoli and cauliflower. The chicken is what is left over from me having rotisserie chicken last weekend by myself while Hubby was gone. I cannot eat a whole chicken even in three meals.

I had toast at breakfast and toast at lunch. I need some food that is not toast.
So I will heat up some chicken fingers and fries. DH may decide he wants cold again tonight and if so he can do it for himself.

After the discussion with styxgirl, what I really want is cheese grits. But since I don't have enough cheese, that would require a trip to Publix and it is hotter than the surface of the sun today (I swear this year is hotter than usual this year) a trip to Publix or pretty much anywhere is the last thing I want to do, I will scrounge around and figure something out. Or not. It is almost too hot to be hungry.

Hot here, too, so I bought a rotisserie chicken, some sourdough rolls (blasphemy in my house where I routinely bake my own), and huge amount of cold, fresh fruit. No veggies today because I do not want to cut any up - I'll put lettuce leaves on the rolls and then the chicken and mayo. I've had the fan on all day and it's just so hot I might have to turn on the air conditioner.

We are having a blast and the girls are loving being together. They all live in different places so it's rare to all be together.

Running out of food ideas this week. My suggestion of leftovers on toast was rejected in favor of ANOTHER burger night! Will make a tossed salad for something fresh, and our potato choice will be leftover roasted spuds or potato chips.

I made a special trip to Costco just so I could pick up more cheddar cheese. Still hopeful I will get myself organized to make the broccoli-cheddar soup tonight. If not, there's always that Costco chicken to fall back on. LOL We are having pasta with 3 cheese sauce tossed salad French bread.
