Almost forgot about this one! I made them on Cinco de Mayo and they were great! Thought we might like this one on hand:
I recently started making black beans in the crockpot and they come out perfect every time... one lb of dried beans, one quart of low sodium chicken stock, one cup of water, one can of Rotel tomatoes, about a tablespoon of Italian seasoning, a tsp or so of garlic powder (or a couple of cloves of fresh garlic). Cook on low all day and you'll have creamy, tasty black beans when you come home from work No need to pre-soak the beans, or anything like that!
