I can second the rice pudding recipe. It comes out awesome, especially if you use aborio rice. I've made it three times since I got my Prime day pot. In fact, just made it last night. DH likes it warm, but I like it chilled.

Recently I made a chocolate chip banana bread in the IP and it turned out great. I followed the recipe below with the exception of adding walnuts and chocolate chips. Last night I tried meatloaf for the first time last night. I loosely followed the attached recipe. I used only a pound of ground beef and 1 egg. I made 2 small loaves in disposable aluminum pans (they fit side by side perfectly in my IP). I put 1 can of beef broth, onion slivers and halved new potatoes in the bottom, place the trivia upside down and the meat loaves on top of that. Cooked 18 minutes high pressure, 10 min NPR and everything was done to perfection. DH said it was the best meatloaf I've ever made. Chicken broth in the IP right now. Anxious to see how it turns out. Thanks to gale w, I made Rice Pudding last night in my IP. Today is ds#2's birthday, and he loves rice pudding, so I decided to make some last night for breakfast this morning. I have never made rice pudding before, so this was going to be an adventure, I thought. Instead, it was easy peasy and done within no time. I put the arborio rice in and then took the dog for her before bedtime walk. By the time I got back, the rice was done and had done its pressure release time. It took maybe another 10 minutes to add the milk, eggs, sugar, vanilla and raisins and bring to a boil then Ds2 loved it this morning! Today, I made egg salad with the cracked ones (except the one that escaped it's shell) but I can only eat so much of it a week.

Cracked shell hard-boiled eggs are still good 1 week in the fridge according to the USDA - so, no need to eat a ton of egg salad.

I made a rookie mistake today and forgot to close the vent, while preparing my new favorite - butternut squash risotto. I was thinking it was taking a really long time to seal when I finally realized the steam was still coming out. Luckily, there was plenty of liquid left and it came out fine. I also steamed the whole squash before cutting it up. I was hoping to make it really creamy, and it worked! I can't wait to put a whole spaghetti squash in there!
