Today it's going to be a busy busy day. So, I'm going to make it simple by picking up sandwiches or doing leftovers for dinner. I'll see what dh feels like doing later. It depends upon whether or not he has a team lunch at work. When he goes out for lunch he likes a small dinner. Meanwhile, I'm very excited. Oldest ds and I have eye appointments and I have broken glasses. So, I'll finally get a new prescription and will be able to see the Pea board much more clearly. What's on your menu? I'm starting Day 3 of re-painting the kitchen, I should be done by 1:00 or 2:00 so I'm hoping that I'll get the kitchen put back together and do dinner tonight. The last two nights we haven't even had dinner. I told DH to have a big lunch each day and we would just have a snack at night if hungry and the excessive heat that we're experiencing right now has zapped my appetite anyway.
I did buy some low-sodium Virginia Ham at the grocery store deli the other day that I think we'll make grilled ham, cheese and tomato sandwiches with it and have some chips and fruit to go with.

I'm straying from the grilling theme we've been doing this week ... we grill almost every night while on vacation ... Tonight I'm making Creamy Chicken Penne ... I made it at home a couple of weeks ago and it was a hit with everyone ... we all know that is not something that often happens in my house so I'm taking advantage of it The only problem with this is that I don't know exactly what time to have it ready ... dh and whoever else is on the boat get back whenever they feel like it (I'm not going on the boat today ... I prefer to sit on the beach with my book!)

I'm not sure yet, but will probably be takeout from somewhere. DH is doing some work at the Air Force museum in Dayton today and isn't sure what time he'll be home. So... It will either be Chipotle that he picks up on his way home, or something I run out and grab.

Yesterday's lamb shanks were a hit on the plate, but also on my energy. I'm going a bit more low key today, and I think that we will be having a meatless meal. I have some okra to fry, corn, and green beans. I also have some blackberries to use.

Tonight is Mexican night at our house. We're having friends over and enjoying each other's company. I made black beans yesterday in my Instant Pot and I'm going to make some Mexican rice in it later today. I'm also making cheese quesadillas, chicken enchilada casserole, and preparing a taco bar, mainly for the kids. None of this in the Instant Pot!

Tonight youngest ds has a b/d party from 6:00 - 8:00. The invitation doesn't say anything about food being served, which means it could just be cake but who knows. I think I'll have dh and oldest ds make Trader Joes pizza, and I'll make pb sandwiches for me and youngest ds to munch on en-route to the party. If there is pizza ds can still munch on it.

Pasta w/my homemade sauce, complete w/completely unhealthy sausage, meatballs, chicken & pepperoni fried up to flavor the oil that I put in the sauce. Also bought a really fresh loaf of Italian bread to go with our dipping oil from Lui Lui (any NH Peas know the place?). If I get my act together, I'd like to make homemade croutons & Caesar dressing. We'll see . . .

If DS will be home for dinner, I will probably pick up Jersey Mike's on my way home. If he will not be home, DH and I will decide on something - could still be Jersey Mike's, or White Castle, or the BBQ Shack that I pass, or something we already have at home. I only have one bratwurst left from last night and mac and cheese, so he could have that, and I can have chicken skewers (Costco) with Tzatziki (I made up that spelling, I have no clue!)

I don't feel like making anything, but I'm obligated to provide dinner, so we're having tacos because the meat is already cooked and in the freezer. I'll doctor a package of mexican rice and serve tortilla chips and salsa. New glasses, and being able to see better is exciting, scrapmaven ! Have fun choose new frames! The Birdhouse Lady, you mentioned the other day that you had two family members having the surgery the same day at different hospitals. I hope everything went well with the surgeries and the patients are recovering nicely.

I'm leaving shortly and will be gone most of the day, but I'll have the 7yo tonight. I think it will be hot dogs again for dinner, if I can interest him, anyway. Also my DD and her boyfriend are arriving late tonight for the weekend. I'm excited! Well, today was the first step in my next round of dental work (and of course there were unexpected happenings!) so it's a soft diet for me tonight... probably scrambled eggs, maybe fried potatoes, and toast. DH may add sausage or bacon to his. Oooo, good excuse to have ice cream for dessert!

I have pork in the oven that will be pulled pork in about 15 minutes. We are having grilled corn and a salad with it. I planned on coleslaw, but I couldn't get what I needed today.

I hated both okra and limas until I was an adult, but now I even freeze okra. I do like it best when fried. Growing up in the south, I've encountered some pretty slimy okra! It's one of those things that you have to cook to your own taste.

This has been some week! Whew! I did manage to pick up some steaks last night and feed my family and our work crew. It has been crazy with work stuff, family stuff and just life in general.
Thanks Trixie Bender for your well wishes for my family. My mil (83) had back surgery this week and is doing great. She is in minimal pain but very chipper.
My bil also had surgery. He is still in the hospital. He called me last Friday from his remote cabin which is only accessible by boat or plane telling me that he had fallen off his roof and needed rescued. The troopers were called and a med-evac helicopter was launched. My oldest son flew out to the cabin to show them how to get to him. He was flown back to our local hospital. He has broken all his ribs on his left side and had a collapsed lung. He also has a chest tube to drain off fluid. They did surgery to band his ribs back together. He should be on the med here real soon.
As far as dinner tonight....well, who knows, I guess it depends on what the day brings! Maybe grilled cheese, maybe pizza, maybe chicken!

I love this and think we should all adopt it as the dinner thread's official slogan. I'm going for something from a more fall or winter menu...baked potatoes with loads of toppings. We had a nice rain this afternoon, so for once it's not scorching outside and I can use the oven. DH is working a long day today; but hopefully when he gets in a loaded baked potato will hit the spot.

So because I still feel like a bag of rat do-do simple is the most important ingredient for anything I decide to cook.
I want beans and wieners, and that would be canned beans. Not a favorite of DH, but he is so into fending for himself these days he won't complain either way.

I grilled chicken breasts which we had with a tomato and cucumber salad and rice. DH hasn't learned to adapt his cooking for an extra person yet but I have to say he's been totally awesome. tiffanytwisted...I live not far from NH and went to Lui Lui once and don't remember their dipping oil. I hope you enjoyed it!

Had one of mine removed couple years ago. Couldn't believe the difference on how I felt. Hope you feel better soon.
