We still have peaches in the freezer from last season but we'll be hitting our local orachard soon. I love to make fresh peach cobbler! I hope our harsh winter hasn't done them in here. Do you have a good recipe? I'd love a good peach cobbler recipe! Paige. Sorry, paigepea - I didn't see this earlier - here's the recipe I use - it's so easy and we really like it. I've done it with canned peaches too but the fresh are so much better. Easy Peach Cobbler www.myrecipes.com/recipe/easy-peach-cobbler-10000000257827/1/2 cup unsalted butter 1 cup all-purpose flour 2 cups sugar, divided *1 tablespoon baking powder Pinch of salt 1 cup milk 4 cups fresh peach slices 1 tablespoon lemon juice Ground cinnamon or nutmeg (optional) Melt butter in a 13- x 9-inch baking dish. Combine flour, 1 cup sugar, baking powder, and salt; add milk, stirring just until dry ingredients are moistened. Pour batter over butter (do not stir). Bring remaining 1 cup sugar, peach slices, and lemon juice to a boil over high heat, stirring constantly; pour over batter (do not stir). Sprinkle with cinnamon, if desired. Bake at 375 for 40 to 45 minutes or until golden brown. Serve cobbler warm or cool. *Note: I usually decrease the sugar by at least 1/2 cup, depending on the sweetness of the peaches; I also sprinkle a little cinnamon in the peach mixture, as well as on top. Oh, and sometimes, if I remember, I add a tsp or so of my homemade vanilla to the batter.
