Sunday food prep- keeping the INSTAPOT busy. Made a dozen eggs for the week, cut up veggies, made yogurt, oatmeals and have banana bread going now. PUMPKIN COFFEE CAKE STEEL CUT OATS- INSTAPOT I'm feeling like a dummy. Is this oatmeal or coffee cake? It's oatmeal- but the topping is kind of like coffee cake topping. It was very yummy- the oatmeal by itself is kind of bland because there is no sugar or fat, but the topping really sweetens it up. I like to make a couple batches of oatmeals that I can just heat up during the week.

Hi everyone.
I've been MIA as my poor son had dental surgery on Sat and he has been in so much pain. He was supposed to have 2 bottom wisdom teeth out and then a molar that had not erupted that was still under his gums. Surgeon got in there and took out all 4 wisdom teeth and the "molar" in the gum was actually 2 molars that had fused together so it was huge. Poor kid is miserable. We are on day 3 of recovery and his face is still huge and his jaw hurts like the devil.
Anyway, I've been making him a lot of soft foods and trying to make for us to eat as well. It's been a busy few days.
At any rate, I'm going to try the ribs in the IP tonight. DH is going to be skeptical for sure because he usually smokes the ribs for 10-12 hours on the smoker. I thought I'd give them a try.
Don't know whether to use the apple juice/cider recipe from the Great Chow guy, or do the peas tried and true rib recipe.
HELP ME DECIDE!!! LOL..

SO has been working a lot of night shifts lately, so I've been cooking a lot of single meals. So the IP has gotten a bit of a break. But, last week I made beef and broccoli again because it was such a hit (and chuck roast was on a fantastic sale at Kroger). And then last night I made carne asada (again, super sale on chuck roast 👍🏻) in the crock pot and rice in the IP for a Chipotle inspired build your own burrito bar. On the way home from work yesterday SO said "I'm starving, so it's a good thing rice is so fast to make!" (So, I think he's coming around to the IP) I also made eggs for the week last night. I keep putting off making hard boiled eggs... I know they're SUPER easy to make in the IP, but I've just been lazy lately

I made the rib recipe you mentioned and I didn't care for it. It tasted like they were boiled and I didn't like it. There was a boneless rib recipe that was posted earlier in this thread that sounded really good. Hope your son feels better soon!

Okay, gang, big news for me. I joined Weight Watchers for the first time in my life. With my thyroid knocked out and that 12 week course of I.V. steroids, I put on more weight than I ever have outside of pregnancy. So, I'm finally ready to drop 25 of it. You all know how I love to cook - and eat - so it will be a challenge to modify some of my favorite recipes, although some I will just leave as is and just eat smaller portions. I made a gallon of Greek Yogurt in my IP yesterday- good for WW, of course. I am just finishing up a large pot of 1 Smart Point Veggie soup in my IP - that will be lunch. I am going to try hard to modify as many of the standard WW recipes for the IP as possible. Tonight, for the whole family will be www.pressurecookingtoday.com/country-style-barbecue-pork-ribs/ - which is NOT a WW recipe. I will serve them with rice and simply have a smaller portion - the sauce isn't too fattening, so it shouldn't be too bad for the diet. You know, there's a Weight Watchers Instant Pot group on Facebook. I just discovered it and just joined so I can't say how good it is yet. But I figure any inspiration can't hurt. So I came to this thread just now for some dinner inspiration, but so far none of you have inspired me. Maybe meatloaf..... It is MUCH cooler today, and rainy, but I'm not sure it's soup weather yet. Maybe.... Come on ladies, someone inspire me! I have to go to the grocery store pretty soon so I need to get my act together.

I was on vaca and need to get back into the swing of cooking. I did make some quinoa in my IP last night to use in salads and wraps for the week. I need to stock pile some freezer meals for during the week.
What are you favorite go-to freezer meals? I generally do soups, stews, but does anyone freeze more hearty meals? and how?
Also... any good recipes for doing bone-in pork chops? they were on sale. I am thinking something with apple cider vinegar, maybe adding some baby potatoes?

So I think I will go with the pea one I found in the main thread. I was worried that the ribs in the cider would taste boiled not braised as there was so much liquid. I will do a rub and then cook them in the pot and then put them in the oven with our fave sauce. Thanks. Doing my potato salad as I type this.

You can make this with bone-in chops - I did and they were yummy!

Remember too, the pot is way more $$$ in Canada, even though it's made here. I got mine at Best Buy rather than online.

I made SkinnyTaste Salsbury Steak in a cast iron skillet on the stove top - gasp!
But my side dish was SkinnyTaste Cheesey Mashed Cauliflower which I made in the IP.
Kids ate it without a complaint - so I'll take that as a success.
