Good morning, everyone! Here is our new thread for the week. I don't think that I'm cooking today. Breakfast will be yogurt (made in the IP), lunch will be out (I'm meeting another pea, IRL, that I haven't met before and am so excited), and then we will have take-out for dinner (I'll probably just eat WW soup) because that is our tradition with ds1 on Wednesday nights while his brother is in respite care. Tomorrow I am planning on making Artichoke and White Bean Soup and modifying it for a pressure cooker. Who's the Pea you're meeting?? I'm jealous. We need to arrange a meet up also. I'm going to try lasagna tonight. I'm a bit skeptical that the noodles aren't going to be cooked to mush, but we will see...

I met up with jodster in Leesburg, which would have been a bit of a haul for you. It was a blast. She lives in WV, so that was about halfway between the two of us. Last night I made shredded chicken using frozen chicken breasts and a jar of salsa. Turned out just okay. I cooked for 20 minutes on High, but I think I could have brought the time down. The salsa was overcooked and it just smelled bad, so I dumped it.
I bought a package of St. Louis Style Ribs from Costco that I'm going to try in the IP tonight. I plan to coil them up on the trivet with 1 cup of apple juice at the bottom and cook for 25 minutes, then smother with barbecue sauce and stick under the broiler for 5 minutes to caramelize the sauce. I will pair with mashed potatoes and maybe garlic green beans.

I made Elaine's WW spinach artichoke soup. My spinach artichoke dip loving son and I gave it two thumbs up! Glad I doubled for leftovers tomorrow! (I also used my new KA for the onion dicing and artichoke chopping! ).

I made bone on chicken breasts over brown rice a few nights ago. OMG! The rice was so delicious with the chicken dripping onto it. I also used chicken broth from my instant pot that I had from cooking some chicken the week before instead of water. Delicious!
Tonight I did small red potatoes under some thin poem chops. It was pretty good too. I prefer grilled pork chops, but the Instant Pot will work for a quick meal.

I made Elaine's WW spinach artichoke soup. My spinach artichoke dip loving son and I gave it two thumbs up! Glad I doubled for leftovers tomorrow! (I also used my new KA for the onion dicing and artichoke chopping! ). With Weight Watchers, I have been using my dicing kit for the KA processor almost every day. I love that thing! I'm glad that you liked the soup - there are some good WW-friendly recipes out there these days. I like the movement to have lower fat foods taste good.

Well, I have only used my Instant Pot a couple of times, but loved it!! So I'm taking it in the RV with me when I go to my dog show this week. I figure it's perfect since I will be off schedule and might need quick meals.
Now hopefully I will have internet to access the threads and recipes!!

Well, the lasagna was a great success! I didn't put quite enough sauce in it -- or maybe it soaked up? -- so we just spooned some from the leftover in the jar onto our portions and heated it in the microwave. I made it in my 7" springform pan and at first I thought it would hardly be enough even for two of us. But it holds more than I thought. We each ate a quarter of it and there's one serving left for each of us. I'd love for it to be dinner tomorrow but dh might ruin that by taking it for lunch. I think I'll tell him it IS dinner and if he takes it for lunch then he's on his own for dinner. But, as a result of this lasagna I've ordered another springform pan. lol. I can fit two in the IP and make enough for all four of us when the kids are home, and have leftovers. I just can't believe how easy this is. It's still a bit "fiddly" as I call any recipe where I have to do multiple things. But still, easy.

I made a vegetable lentil soup last week, and when it was all in the IP on sauté, all I could think was BAM! It was awesome! That was not an inexpensive investment, but totally worth it!

My IP came in yesterday and I made some rice pudding. It was really good. I had picked up some quality vanilla the last time I was in Mexico and I think I'm going to be adding it to everything.

We've had our pot since December last year...jumping in this week!
I made the best deer roast my hubby has ever eaten this week! so he says. I'm not a venison person & find the meat wild & gamey. This was different. Not sure how healthy it was, but very tasty.
3 lb. roast (frozen) 1 1/2 cups apple cider 1 pkg ranch dressing (dry) 1 pkg Italian dressing (dry) 1 pkg brown gravy mix (dry)
I dumped the liquid in first, added each packet & mixed well. Added roast (1 large piece). set on meat 90 mins. NPR, added red potatoes, 10 mins. NPR. Roast was falling apart & no gamey taste at all! Even I enjoyed it.
Anyone else got venison recipes, it's that time of year here?

I made teriyaki chicken last night in the pot as per my son's request. I couldn't refuse him because he just started eating again after a big oral surgery he had 10 days ago. I was happy he just wanted to try solids!!! It turned out amazing and we ate the thighs with rice and some fresh broccoli out of our neighbours garden that she had given me. Tonight we are going to my brother's for dinner so I don't have to cook!

Are the dice sizes better, more uniform? The dicing is mostly uniform, but there are some smaller pieces. When I hand chopped everything I always did my best to make things uniform, or cut on an angle. This may be a *bit less uniform, but for the time saved, I immediately got over it! Last night I only had onion and artichoke hearts to chop, and at first I wasn't sure it warranted pulling the KA out and cleaning it up, but when I got everything in the IP so quickly without :::chop chop chop::: - yes, yes it was quite worth it!!

I bought the teriyaki cooking sauce in a jar and seasoned thighs with salt, pepper and a bit of thyme. Browned the thighs on sauté mode in oil and a bit of butter and then poured sauce over with a 1/4 cup water to thin it. Hit poultry button for 25 minutes and ten minute NPR.

I made a batch of split pea soup this afternoon. I had a ham steak in the freezer, so I chopped about half of it up and threw that in too. The flavor of the soup is really good, but it is a lot more watery than I would like. I don't know if I messed up my count and put to much in to start with or what. The recipe called for 6 cups and 17 minutes on manual for cooking. At least it still tastes great.
I also received the extra silicone ring for the lid that I ordered from the daily deals on Amazon.
Now I am debating doing a batch of brownies in the pot. I really love this thing.
