I probably stuffed about 20-25 halves and stick them in pot, layering, added tomato sauce to cover. Then I just set it on Manual for 3 minutes to heat thru, didn't want the peppers to be too mushy. Really good on these cool nights! Not sure what is next on the list, but I started writing down the IP recipes I want to try. ^^^ that's a LOT of pepper halves! How much ground turkey did you start with? I like the idea of putting them in layers in the IP so you can cook a lot at once- then did you freeze the extras for later, or was it only enough servings for your family for one meal?? There's only two of us, but my BF is a one-meal-a-day eater [which I HATE, but I can't get him to eat a lunch], so I don't always end up with leftovers...

I made Chicken and dumplings tonight. It was just ok. The dumplings were so chewy. Not light and fluffy.

Oh my. I made porketta. I love porketta. I always get a few when they are on sale. If you don't know what porketta/porchetta is, it's a pork loin that is well seasoned, rolled and tied with a string. In the oven it has this nice crispy crust because although it's a loin, it's pretty fatty.
I used the IP. It took way longer than it should, I had to keep starting it over. then I switched it to the air fryer to crisp it up. It worked beautifully. But the string stuck to it and all the nice crispy parts pulled off with it. The taste was still good but I will probably just do it in the oven next time.
While it was in the air fryer I made mashed potatoes in the IP. They didn't turn out well at all. Part of the problem was I didn't add enough water. But yesterday was just not my day with the food. My kids liked the potatoes well enough.

The peppers are really small this time of year, like the size of a plum. I actually ate like 5-6 pepper halves as one meal, that's how small they are. It's almost like 'stuffed pepper stew'. I used just over a pound of turkey. I did not freeze any after, I thought about it, but just didn't really want to get into it. There is only 2 of us! But we actually had it as a sidedish with a few other meals (like 1 or 2 pepper halves), and taken them for lunch. I actually think meals like that get better after a few days as the flavors infuse a little more. So I made it Sunday and there are still a few left which will be eaten by the end of the weekend. Unfortunately, as you know with 2 people, sometimes I just end up throwing stuff out! I hate to do it, but freezer is only so big.

I'm making a very simple pork roast in the ninja today. Just browned it well, sprinkled with kosher salt, sprinkled on penzey's bavarian seasoning (no idea where this came from. lol. Probably a freebie) and added a cup of water so it doesn't burn. Plus I put quartered potatoes in there with it.

I'm making a very simple pork roast in the ninja today. Just browned it well, sprinkled with kosher salt, sprinkled on penzey's bavarian seasoning (no idea where this came from. lol. Probably a freebie) and added a cup of water so it doesn't burn. Plus I put quartered potatoes in there with it. I really like the Bavarian Seasoning on pork - I bought it just for that purpose. Your roast sounds delicious.

Your roast sounds delicious. That's a relief. I just wanted it simple and I looked in my drawer-o-goodies and found a new jar of this stuff. I know I wouldn't have ordered it on purpose but if we like this roast I may order more.

Elaine is my hero. I had the instant pot sitting in it's box for about 6 months (don't ask me why I bought it) and based on her threads I got it out and started using it. I absolutely love the silly thing.

Going to try a pork butt tomorrow. The first one i made was phenomenal, the second one was awful- it had been frozen and I suspect it had not completely thawed before I put it in the IP. It was tough.

I have a huge pot of WW 0 point Veggie Soup cooking in my 8 quart IP right now. The WW soups I've been making are so good that my family keeps eating them. I joined WW two weeks ago and would love the recipes you are referring to if it's not too much trouble.

I joined WW two weeks ago and would love the recipes you are referring to if it's not too much trouble. Here's one - I've been adapting the recipes in my head for the pressure cooker, so it is taking me a little while to formally rewrite the directions. I'll put them up as I finish.

I use my 8 quart IP for this one. You may need to halve it for a 6 quart model.

I double this for my family - the boys LOVE lamb! In place of the ginger, pepper, cinnamon and saffron, I use 1 tablespoon of Penzey's Rogan Josh spice blend. So incredibly good!

Now that shopping for ingredients is no longer a hair pulling chore, I made Mexican meatball (albondigas) soup with lots of veggies. Plenty left over for a second meal and some to freeze for later.

elaine : Thank you for those soup recipes and the suggestion to have them for breakfast! I am going to be making some of these for sure. I'm type 2 diabetic and need to eat low carb. Breakfast is so hard, I can never think what to have. I am so tired of eggs.
