I've never made anything with pumpkin outside of pumpkin pie, but this looked kind of good. Pumpkin Chocolate Chip CookiesI have all the items on hand, so thought I'd make some. If you've had Pumpkin Chocolate Chip Cookies before, did you like them? Thanks!

I love all things pumpkin and love pumpkin chocolate chip cookies. I do think they taste better with semi sweet chocolate chips. My recipe is 1 spice cake mix, 1 can of pumpkin puree, and 1 cup (or more) of semi sweet chocolate chips. Mix all together, and bake at 350 degrees for 8 to 10 minutes. Your recipe sounds good, but I like the ease of this one.

Oh, yes. My DD made some recently that were very similar to this recipe. She used whole wheat pastry flour instead of all-purpose and butter instead of shortening. I think the butter makes for a better-tasting cookie. The cookies were even better the next day, too.

I'm one of those people who doesn't like pumpkin in any shape or form. Don't like pumpkin pie or pumpkin spice anything. No candles, no latte, nothing. Am I the only one? I certainly don't want to drink pumpkin -- that's just weird to me, so no lattes, teas, creamers, and such. And I'm not fond of the scent in candles, air freshener, etc. I do like a classic pumpkin roll (the cake rolled up with cream cheese & pecan filling), but that's about it. Given a choice with any other foods, I'd just as soon have them not be pumpkin flavored.

I dislike pumpkin. But I do make a pumpkin chocolate chip cookie for my husband that I can eat.

We make those a lot. They are doughier than regular chocolate chip cookies, and not super pumpkin-y. I think I add more chocolate chips than it calls for (we like to use the ghiradelli dark chocolate)

I've only had them once and didn't much like them. Not sure but perhaps it was the recipe? Would be willing to try them again with a different recipe.

No funny stuff like zuccini. My mom gets the ones from Costco I ate most of them last time I was there! lol!

I thought they sounded like they would be really good but when I made some, I didn't really care for them. They were o.k. but if I'm going to go through that effort, I'm going to make something better than that.

I love most anything pumpkin, but I personally do not like chocolate and pumpkin together. So yes to pumpkin cookies, but no to chocolate chips in them. My mom used to make something called "harvest cupcakes" which were a pumpkin cupcake with nuts and chocolate chips. The rest of the family adored them, but I just didn't like the chocolate chips in there.
I recently made a Pumpkin Crunch Cake which was a big hit at a work luncheon. I got the recipe from my sister, but there are tons of almost identical ones online. It was a different way to use pumpkin, and really good.

I love the smell of pumpkin but not the flavor. But my kids love them. Seriously, I cannot even keep pumpkins muffins with cream cheese frosting in my house. They are gone as fast as I make them. So I'm sure pumpkin chocolate chip cookies would be devoured. I'm going to try to make some this weekend.

I've made them for years, and they're always a hit. Below is the recipe that I use. I always double the recipe. My oven seems to take longer to bake. The cookies should be a cake-like consistency. Not alone / I like pumpkin (fresh not canned) roasted or in pasta or risotto but the whole sweet thing makes me shudder. The pumpkin spice "everything" that peas talk about is so foreign as we don't have it at all here. Never seen canned, drinks, candles, candy etc.

I gotta admit when I first read this, the 12 year-old boy in me thought, "Ewwww...that sounds like a good way to ruin chocolate chip cookies!" But after a moment, my mature side kicked in and thinks they sound good. I might give them a try.

I love them. I use this 2004 recipe from The Boston Globe
Makes about 3 dozen.
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, at room temperature
1 1/2 cups sugar
1 cup canned pumpkin puree
1 egg, beaten
1 teaspoon vanilla extract
1 package (6 ounces) semisweet chocolate chips or chunks
1/2 cup walnuts or pecans (optional)
1. Set the oven to 350 degrees. Line 2 baking sheets with parchment paper.
2. In a medium bowl, sift together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Set aside.
3. In an electric mixer with the paddle attachment, cream the butter and sugar on medium speed until fluffy. Add the pumpkin, egg, and vanilla and beat just until blended.
4. Mix in the dry ingredients.
5. Remove the bowl from the mixer stand. With a rubber spatula, stir in the chocolate chips or chunks and nuts, if using.
6. Drop the batter by heaping tablespoons 1 inch apart on the baking sheets.
7. Bake the cookies for 13 to 15 minutes or until lightly browned. Rotate the sheets halfway through baking to ensure even baking. Let the cookies cool on the sheets for a few minutes. Transfer to wire racks to cool completely.
