Happy Anniversary leannec ! and Happy Birthday JoP ! oh my goodness - and Happy Anniversary to you too shelby! Other than a trip to the grocery store for a few last minute things, I think we're good to go for the grandsons & mom/dad's visit on Wednesday. Made a cheesecake (in the Instant Pot) and strawberry compote today for dsil so I'm over being in the kitchen again. Swedish meatballs from the freezer, sone skinny noodles and gravy, and a green veggie will be tonight's meal.

Tonight is my quilt group night so we are eating early. Leftover chili and cornbread from the freezer. I'll make some broccoli, too.

Some shrimp that we bought at Sam's Club over the weekend - all I remember is Asiago and that it comes with a tomato-y sauce. Once I see what it really is, I will figure out a side dish and maybe peel some carrots for the veggie. I haven't been to Sam's in years and years (we have a Costco card, but DS only has Sam's at school so I took the extra card). They do have a lot of things that are different from Costco. I'd like to go back on a weekday, so maybe when I am on vacation Thanksgiving week

Wow! Good wishes all around for birthdays, anniversary, and healthy news.
On the run tonight as usual. I just gulped down an open faced turkey sandwich and then I'm headed out to tutor a student. DH has many leftovers from wich to choose.
I will be home tomorrow night and will try to come up with something nice to carry us thru election coverage.

Tonight's menu is swai with sweet chili sauce, roasted potatoes, and butternut squash. Strange combination but it's what's left in the cupboard right now and I don't feel like going to the store so I'll make it work. DH will eat it and not complain. He'd only complain if it was peanut butter and jelly sandwiches - he doesn't like peanut butter.

Planning a menu for the week was a complete fizzle. I'm unprepared for dinners this week. Well, time to get it together and come up w/tonight's dinner idea. I'll let you know just what that is when I decide. Perhaps gyoza and rice? hmmm... I am not in a creative mood today. What's on your menu? Have a great Monday and a fantastic week. Me too!! I am in a serious slump and nothing looks or sounds good to me. I've got a pork sirloin roast from costco in the fridge. I plan on making a rub for it and baking it. Will most likely roast carrots and potatoes for a side. Can the veggies cook for 1.5 hours (along with the roast) without turning to total mush? Can you tell I don't cook roasts often lol.

Though I've never really cooked pork, let alone a pork roast, I would think that putting the veggies in too soon would make them mushy. Though you do want them to absorb the flavors. I would put the veggies in for the last 30 minutes of cooking, perhaps. Again, I've fried bacon, but really don't have any experience w/pork other than that. So, take my advice w/a grain of salt. Oh, I would think your potatoes should be fine if roasted for an hour.

Potatoes take about 45 mins depending on how small you cut them ... carrots about half an hour (cut in half)

Thanks scrapmaven and leannec I'll go ahead and cut the potatoes a little on the bigger side and put them in with the roast. If I remember I'll toss baby carrots in later. Thanks again!

We had Italian herb chicken w/ balsamic glaze, roasted green beans and Parmesan tomatoes. It was SO good!! Even my tomato-hating DH liked the tomatoes!

JoP, happy birthday, my sweet friend. shelby, happy 58th anniversary! WOW!! newlywoods03, just for a differing opinion, if your roast is cooking at a low-ish temp, I think your carrots and potatoes could definitely go in for 1.5 hrs. I just roasted potato chunks for an hour at 400 degrees, and they're done, but not at all mushy.
