I baked last night does that count? A half sheet cake, 2 dozen roll out sugar cookies and 2 dozen cupcakes. I have the cake torted and filled so far and icing made for the cookies and that's it. I've still got to make fondant, tint it and cover the sheet cake, decorate it, make a fondant tool belt for the top, chocolate tools for the cake, decorate the tool cookies, and possibly make some hardhat cake pops if I have time. All this is due Tuesday I'm being a procrastinator of the worst sort. I'll be up late tonight lol Should say the cupcakes are for us using extra batter from the sheet cake so they are finished and boring lol

I just put some fudge brownies in the oven. It's just straight from the box, but next time I'm going to try the slutty brownie recipe.

I made a big pan of French coconut cream bars this afternoon. Must have recipe please and thank you! These are my most requested sweet!
French coconut cream bars 2 cups flour 2 cups sugar 1 tsp. soda 1 cup butter 1 cup water 1/4 cup cocoa 1/2 cup buttermilk 2 beaten eggs 1 tsp. vanilla extract * Mix flour, sugar and soda in large bowl. Set aside. In a saucepan, mix butter, water and cocoa. Bring to a boil. Pour over flour mixture and mix well. Add buttermilk, eggs and vanilla. Beat until smooth. Pour into a greased and floured 10X15 jelly roll pan or two 9X13 pans. Bake at 375 degrees for 15-20 minutes or until cake tester comes out clean. Cool completely. Filling 4 cups powdered sugar 1/4 cup milk 1 cup softened butter 1 Tbsp. coconut flavoring * Mix well with mixer and spread evenly on completely cooled bars. Refrigerate. Glaze 1 cup butter 12 ounces milk chocolate chips 2 tsp. vanilla extract * Put butter and chips in saucepan. Melt over low heat. When completely melted add vanilla and spread evenly over chilled bars. Return to fridge to chill completely before cutting into squares.
(These freeze beautifully and it's always nice to be able to pull homemade goodies out of your freezer when something unexpectedly comes up.)

I am not a big fan of coconut, but in reading the recipe, I bet I could make them without it. What do you guys think? I'm not a fan of coconut either but it's a texture issue with me so I love these because there isn't coconut in them. I wouldn't skip it altogether, I'd substitute mint, almond, orange or vanilla extract for the coconut extract.

I'm in the midst of making layers for my DS' 4th of July cake. We haven't practiced it yet so this will be interesting. When you cut it, it's supposed to look like the flag.
