Tonight will probably be tacos. I'm not sure who will be home and who will be gone. I'm also going to bake cookies for yds. It's going to be a busy, but productive day. We are having soft tacos here. The meat mixture is cooked and everything else is ready to go. DH is leaving early tomorrow for the US for a conference in Orlando all week, so I'll be on my own again. I know I'll probably eat out a couple of times, which is good because I hate cooking for one.

Well I still have not made it to the grocery store. Last night when I got out of work, there was a lot of lightning in a very dark sky. I knew rain was coming so I figured I did not want to be stuck in the rain getting groceries. I just ate some hummus and pita chips for dinner last night. DS has requested a chicken for dinner tonight. So while I am at the grocery I'm going to pick him up a rotisserie chicken. There's no telling what I'll have yet.

Burritos! It's family night at the boys' school at 6. It's something new that started this year. One Friday evening a month they'll have a family night. Tonight the theme is healthy eating- we will have burritos for dinner, hear a presentation about healthy eating and make a healthy snack to take home (energy bites). It should be a fun evening

We’re having hamburgers. I’m guessing dh has something planned to eat with them but I don’t know what. I may have coleslaw and possibly broccoli. The veggie selection dwindles at the end of the week.

AussieMeg, we sure are enjoying your birthday here in the US! Hope your day is great too. I'm thinking wings and some side for DH. I have no idea what I'll eat. Do you ever get hungry, but nothing seems appealing? That's where I am now. I went shopping last night, so the fridge is full. Hoping inspiration comes along before 6:00. Happy weekend!!

Just not in Australia anymore. LOL Well, that's something new. We had a nice visit with my great-niece and her fiance. But man, they are so young. DH I got married when we were 36 so everyone who marries in their early 20's is young to us. They were on the road again early this morning on the way to San Diego. They don't eat breakfast so I had to give them some advice about healthy eating habits. She agreed that they have horrible habits. <sigh> Tonight I think it's sesame short ribs. I *think* we're heading to the Bay Area tomorrow for a few days.

BFF wants to come up and have sushi tonight so that's what I'm going to do. I'll hit the Subway and pick up a sandwich for DS. This gets me out of grocery shopping for yet another day.

I've been trying to empty the freezers forever it seems, but we still have so much food to use up before we move! So, it'll be hamburgers from the freezer tonight... and probably a lot more times in the next 3 weeks! *sigh*

I suggested spaghetti to dh and he said "Too many carbs!" So I browsed my Everything Chicken board on Pinterest and found a recipe for Garlic Sauce Chicken ... I'm a garlic freak so this is right up my alley I'll serve it with wide egg noodles (that dh will not eat!) and some sort of veggies

I'm a garlic freak so this is right up my alley I'll serve it with wide egg noodles (that dh will not eat!) and some sort of veggies My dieter went to a boulangerie yesterday to order things for lunch with his teacher. He said to pity him!!! He is in Provence. There is no pity available. Eat the food! It's good! REMEMBER CHINA!!! He said he can't do low carb in France. Yeah what-EV-er. I am making spaghetti with turkey meat sauce. I bought some shredded parmesan cheese and lots of vegetables for us for dinner. We are having company this weekend...I don't know what her name is. It's a her though!

Thanks again for the birthday wishes girls! I like this different time zone stuff, it’s like getting 2 special days! Hmmmm what’s for dinner? Well seeing that DSO has cooked almost every night for 2 weeks it’s probably time for me to cook something tonight. I have no idea what though. For my birthday DSO bought me a Thermomix, and my dad also chipped in a considerable amount towards it. My brother and SIL bought me 4 cookbooks and the discs to go with it. I would love to be able to cook something in it tonight, but I haven’t had a lesson yet and I am reluctant to use it without having a lesson. The woman they bought it from has gone away for the weekend and she can’t come over to give me a lesson until Wednesday. It’s going to be so hard seeing this lovely new toy sitting on the counter and not being able to use it! Anyway, here’s my new baby:

Basically egg roll filling without the wrappers. I've been making a lot of cabbage based skillet meals lately, and this is one of our favorites.

Our spaghetti was amazing. I bought an avocado and asparagus to have with it. I decided against salad. I wasn't feeling like making salad so I skipped it. There is store bought banana bread for later.

Thermomix"Thermomix is a kitchen gadget - though that term over-simplifies a kitchen machine that is not only a food-processor but one that also, weighs, cooks, chops, crushes, emulsifies, whips, mixes, steams, blends, kneads, grinds simmers, grates and mills." I'm surprised that they're not more common in the US. I guess the Instant Pot is the go-to appliance there. We can't buy Instant Pots here. Thermomix is super expensive (way too much money tbh). But everyone I know who has one absolutely LOVES it.

I had some wheat thins, a handful of peanut m&ms and a few more than a few cheddar cheese and sour cream ruffles. Ha. Healthy stuff that. But...I went to the doc today and the spot on my brain is, according to this guy, absolutely nothing to worry about. Just a small mass that apparently happens sometimes. He is sending me to a specialist neurologist to make sure but his words were "you will get to hear that it is nothing to worry about from another brain guy too and be able to sleep better at night." So that is good news. I'm kind of tired, I was up at about 4 this morning worrying on this visit...but even with with nothing that can be done about the fundamental eye weirdness, it is nice that to know that I don't have to worry about anything else. .

Spent the day back and forth between both houses. Couldn't do as much as I wanted because I was searching for winter clothes to take to Lake Tahoe tomorrow. I hate cold. But no cooking for 5 days. Tried a pizza place in our new neighborhood. It wasn't very good. I was so hoping it would be.
