After this weekend I'm exhausted. I'm going to sleep through acupuncture. Dinner will be sandwiches and chips. Does getting the bread out of the bag and chopping a tomato count as a gourmet meal?
What's on your menu?
Have a great day and a wonderful week.

I have made beef stroganoff for dinner tonight. It is about finished cooking and then I will boil some noodles and maybe a green veggie.

We ended up having Chicken Tortilla Soup last night. I'm thinking baked chicken thighs for dinner. Maybe.

Maybe not "gourmet meal", but definitely "meal".
Windy today, and my pony friend absolutely hates wind. Suddenly, wolves, tigers and monsters are hiding behind every tree, and he spooks worse than a three year old. He is not usually a high-strung horse, but autumn is definitely an....ahem...."interesting" season. But I'll take an energetic horse over a lazy one any day.
Oh, dinner? Mashed potatoes, and leftover roast.

After leaving my babies to fend for themselves for a few days they are happy to have me back in the kitchen and DS requested chili and nachos for dinner. We have a heat wave coming in and I was hoping to grill, but decided to keep him happy and already have it simmering on the stove. Hugs to you scrapmaven, I am very grateful DS choose to stay local for a couple of years so I get to put off the empty nest.

The tribal scribe has felt many winds of autumnal change these past few weeks, not the least of which is a mighty blow of love and release from our loving mother, scrapmaven, as she comes to terms with her uber-smart youngster being sent forth into the world. Tribal support and best wishes to said youngster. May you be comforted in the fact that your tribal sisters bow to your parenting skills, including those of resilience, good judgment, and ability to complete term papers that use proper verb tenses, even after a night of partying or a day of waiting and waiting and waiting for his turn in the dorm laundromat. Sending aspirin and Tides of love to our surrogate son!

Sending aspirin and Tides of love to our surrogate son! I loved this, desertgirl. We put an empty fridge in his room. He wouldn't let us stock it. When I go back I'm certain that I won't find beer. Oh Noooooo.... He's a good kid and so far his common sense has prevailed, but he doesn't even have his first class until Thursday. I won't faint if he has a beer, but I just hope that he'll use good judgement and focus more on his classes. So, far he has shown us that he is very trustworthy. He is however, a college human.

I’m having a salad with some shredded chicken left from yesterday’s egg rolls which were so good!! I have avocado as well. And since we bought a huge cauliflower yesterday (here they’re priced per head unlike broccoli which is per pound) for very little money I’ll have some steamed cauliflower also.

I asked Picky#1 what she wanted for dinner tonight and she said "You never cook anything we like anyway!" So I'm cooking something they don't like and they can fend for themselves ... yes, I'm passive aggressive but they are also old enough to cook Tonight it's chicken enchiladas and Spanish rice ... I use my precious Ro-Tel so it's probably more like Canadian Spanish rice

For our dining pleasure this evening we will be enjoying hot ham and swiss sandwiches, cauliflower, broccoli, and fruit. I think I am going to a 7th grade volleyball game that is being played in the town south of here, 12 miles south. Apparently they play three games and the one I want to watch is the second game but geez I don't want to miss any in case she plays in one of the other games. So anyway I wanted something quick I can fix when I get back to town.
Happy Monday Everybody!

I made a beef casserole thingy (put all the sad and tired looking veggies) in the instant pot - kitchen renovations will hopefully be finished this week.

You guys are much better mothers than me ... I was jumping for joy when my kids left for college. However, I'm sure I'll be begging the 8yo to stay home when the time comes. OTOH, we haven't weathered the teen years with him yet, so that attitude is subject to change. I have an untouched Costco chicken in the fridge, so I'm going to make some kind of chicken and noodles thing. I cooked a lot over the weekend and I'm looking forward to making something simple tonight.

Tonight we are having BBQ chicken, roasted tomatoes, and stuff. I have to go to the store now but just to get lunch food in. That isn't hard.

I can't believe I am writing this. I am going out for Thai food again (Thai friend is back from Australia and she wants to go for lunch). I just ate but hey why not right? I am on a quest I think to put on as much weight as I can before I leave for Europe. Good thing all my clothes are stretchy. Not going is not an option either. It will be fun, though and the food is excellent. We ate there on Thursday and it's my favourite Thai restaurant in town and it's close to home! I guess I am making dinner for one tonight.

I have Picky#1 in her first year of University scrapmaven but she is living at home ... we actually live a block from the train that is a 15 minute ride to the University of Calgary which she now attends We hardly see her because she is always at work (Starbucks) or with her boyfriend ... or she is hiding out in her room ... I seriously think that if she went away to school I wouldn't see her much more I'm sorry that you are missing your boy ... you can share my moody hormonal 18 year old dd

Monday is ususally the night I tutor my ACT student, but he texted me shortly before we were to begin and backed out. I get an evening home I wasn't expecting. Of course, I didn't have a meal planned. I just noticed we have a couple hot dogs that have been in the fridge a suspiciously long time, so I'll make a couple pigs-in-the-blanket for DH and fend for myself. If scrapmaven can be gourmet, so can I.

Change of plans for us ... apparently dd#1's boyfriend is coming over (which he does often ... his mum works nights so I think he only gets home cooked meals here) ... that means that enchiladas are out So we are just going with French Toast and bacon ... I don't eat either of those so I'll scramble up a couple of eggs for myself

I just opened Facebook now and the first story was a photo of DS and his other BFF posted by the head of his old school. Oh my heart! I love his other BFF. He is such a great young man. Both of them together melted my heart!

It's cold and dreary here today, so we are having taco soup. My FIL brought fresh tomatoes from his garden, so the last two days have been BLTs, BLTs, and more BLTs! I love BLTs made with fresh tomatoes! :-)
