If dh goes to the store this am then I'll make chicken tortilla soup. I need a bell pepper. Summer is great, because I can just go out back and pick a fresh one from our plants. Dh has a super green thumb. On the other hand, I look at houseplants and they cringe with fear.

I’m doing a twist on a vegan recipe—a sweet potato, chickpea and kale soup with farro, Thai curry paste and cayenne pepper. I’m adding rotisserie chicken to it and might throw in some cauliflower too.

I will be at Costco when the doors open and we will be eating something from Costco for dinner. Absolutely, positively. I haven't had a Costco chicken in the house since mid-December and I'm lonely for them. scrapmaven, thank you for making me feel better about my lack of gardening skills. peano, your soup sounds fabulous.

DS went back to school yesterday, so dh and I are having tuna sandwiches. (DS is not a tuna fan, so I don't make them when he is at home!) I think I even remembered to buy both the celery and the green onions for it!

US Costco chickens are huge. They are also much cheaper than we get at home. Also your Costco’s rock for other stuff, too. Ours are very good. Yours rock! There were these brownie crisps with sea salt that looked good. We can’t get them. The package is too big for me to eat. But goodness they looked good!

I am making spinach and paneer curry with brown rice tonight. There is plenty of it, so I will be having it again later in the week.
Easy day today - Germany class first up, then shopping on the way home. After lunch, I went for a walk on my usual route - a bit slower today for some reason, but that's not really important at this stage - it's about getting out and moving more. Tomorrow will not be so much fun - dentist for a filling at 10am, then physio in the evening.

I've had a ziplock bag of turkey and wild rice soup in my freezer that apparently got smooshed before it was frozen all of the way and is a weird shape. I'm tired of it not stacking nicely with the others, so we'll have it for dinner tonight.

For our dining pleasure this evening we will be enjoying food made with ground beef, if I grind up the 3.99 a pound roast the other half of we purchased Saturday. Tacos, goulash, spaghetti, loose meat sandwiches, the choices are endless. Sometime this afternoon I will need to decide or else we will be enjoying a meatless, vegetableless, fruitless meal......LOL

I've been having a craving for seafood (we've had precious little since moving and haven't really restocked the freezer) so we're going hunting for some crab legs and/or lobster tails for tonight. Finish up the potato salad and add a green salad and that's dinner!

It is snowing (estimated 30 cm the next 12 hours, possibly more), DH is sick again, so guess who is the lucky one who gets to shovel the driveway? And did I mention it is windy as well (not as bad as in the mountains tonight, but still) which means I will have to shovel the same snow at least twice? Sigh. And start over again tomorrow morning? This calls for chocolate!!
Dinner? I made fiskegrateng, which made DD Happy. There are lots of leftovers, which she will eat for breakfast, lunch and possibly another breakfast.

I was supposed to volunteer with the kitties today and tomorrow but the facility is in quarantine right now ... not a problem for my dog who is vaccinated but I'm a bad cat owner and my two indoor cats have not had shots in years So I won't get to see the cats and kittens this week ... better to be safe than sorry I kind of need a couple of days off anyway so it's all good We are having chicken Caesar salad for dinner tonight ... no idea who will eat it but I just don't care ... chances are if dd#1's boyfriend is here he will love it ... that kid (age 18) is so much more easy to please than my dd's scrapmaven, I can't keep any sort of plant alive ... we have trees in the back yard that dh waters but I am definitely not in charge of any living thing other than the dd's

My dads friend brought me and my parents each big bag of crappie he caught last weekend. Already fileted and cleaned. I lightly coat them in an herby cornmeal and then pan fry them. So that’s dinner tonight with rosemary smashed potatoes and sautéed fresh green beans and mushrooms.

Hi Everyone! I have been missing this thread for a few weeks. So very busy at work and we finally hired someone, so I feel the stress just easing out. Sigh... SO got an air fryer for Christmas, but somehow I am the one cooking with it. Hmmm. Tonight I am making panko breaded pork chops in the air fryer, PW crashed potatoes and some kind of veggies. I will also make chili tonight to have tomorrow night.

I think it's going to be meatloaf tonight. It's been a while, and it's a good chance to run the oven to help heat the kitchen up. It'll be about 2 degrees about dinner time...
Maybe baked potatoes to go with, or mashed.

Tonight we are having grilled chicken, green salad, and probably some other vege I find in the fridge.
Yesterday I cleaned out my linen closet....why was there so much stuff in there. I got rid of a bunch of stuff and boy do I feel good about it. Who needs 6 sets of sheets for one bed? Not me!!

Who needs 6 sets of sheets for one bed? Not me!! LOL I have 5 for ds. But he has short bowel syndrome and GI conditions so it comes in handy. Especially like now when he has the stomach flu.

I made what is likely the single worst batch of chicken and dumplings last night. Lazy girl that I am (and still slightly sick) I bought the frozen dumplings. Yuck. They were not good at all. And, because when I make them they still have a bit of flour sticking to them and the frozen ones don't, the sauce never thickened and then didn't get all fluffy. And yet, I still ate it. And did again for lunch today. And will again tonight. The broth is good. I feel SOOOOO much better today, but boy am I tired. And y'all? do me a favor? say a little prayer, do the dance of the bare boobied woman under a full moon, send good thoughts, whatever for me? Tomorrow I get to go back to another neurologist to get a second opinion on a spot they found on my latest mri (brain)...it likely nothing, like 99% nothing, but I am still a little nervous.

I’m out now to get batteries and avoid Ex. I’m determined that now that the kids are not at home I’m not allowing him to be conveniently there for dinner or lunch or whatever. I’m guessing he feels he got the short end of the stick in the divorce loosing his cook and all😉

Home from school today so I tried to make it a semi-productive day. I spent a couple hours in the kitchen: made chicken soup, lunches packed for the week, sausage stuffing made for portobells, fruits and veggies cut up for snacking. We also still have lots of stuffed peppers left over from last night, so DH has many choices. I'll make myself a WW-friendly veggie and pasta dinner tonight. After all that I took myself out to the movies. Saw The Greatest Showman and I really enjoyed it. I don't go out to the movies too often, but this one does need to be seen on the big screen. Get well wishes to many! anxiousmom, you will be in my thoughts this week!

I cooked 3 chickens (not huge ones) in the IP yesterday.... so makin chicken curry with cauliflower rice for DH, DD doesn’t like curry so she will get chicken quesadilla and I will either have curry or chicken and salad.... going to be chicken in our future for a couple of days!!!!
