I know there are a couple of you out there!
I thought we could share how things are going as we push forward to 30 days,what recipes you are loving and anything else Whole 30 related.
Today is my day 15 and I feel great. I broke the rule and did weigh myself (I am down a little over 8 pounds).
I will have to say the first week sucked! I had a horrible headache on day 2 and the rest of that week I was tired and felt off. Did you feel the same way?

I am a flunkie of my second round. I made it to day 7. I just threw it out the window. I have been eating clean though as much as possible in the others times. Kind of had a family emergency that threw me off the wagon. I may start it up again in February.
My thought was when I had made it halfway, I could see light at the end of the tunnel and I was seeing it to the end. Which I did. I found out a lot of what my body can tolerate and what it can't. I have used that since last January to make small changes.
I never got the sugar anger or the headaches, either time.

I'm on Day 15 and gaining momentum. I keep things simple while on Whole30. I was busy all morning so I made a pan meal of mixed veggies and boneless/skinless chicken thighs. I coated the chicken thighs in a mixture of Buffalo -tumeric ghee and Franks Hot sauce + salt and pepper. They were so tasty and juicy. Tonight, I'm going to put a seasoned pot roast in the crock pot for 4 hours. Geez, I should get on that I'm also doing Yoga with Adriene's 30 day January challenge. I highly recommend it. This is my second full round. I did a few mini rounds but I try to eat mostly Paleo. November/December was not a good time for eating. Way too many carbs. I'm trying to get back on track now.

Tonight I am grilling chicken that I marinaded in one of the Whole 30 dressings I made. We are also having salad and baked sweet potato.

I'm on week two. On Saturday, I made my first breakfast casserole. It was delicious. I also made homemade "lipton onion soup mix" and made homemade burgers. And my usual lunch of roasted veggies/sweet potato. Both of my co-workers flaked so doing it on my own.

One of my favorite things from my first Whole 30 was getting into the habit of making my own mayo. It was like all Bill Nye the Science Guy up in our kitchen. LOL Also some of the amazing sauces that I use all the time that are soooo yummy.

The recipe I use is from "Well Fed" by Melissa Joulwan. That book also has a chocolate chili I love. Her cookbook, "Well Fed Weeknights" has a recipe for Bacon-Jalapeno meatballs with Everything Carrots and special sauce that is awesome, but I double up on the special sauce and use it on everything. There's also a great roasted red pepper sauce in there. I feel you on the cooking, especially when doing a Whole 30. It feels like it's neverending! If I hadn't done at least some basic prep early in the week, I would've been sunk. As it is, on my first round, I broke down and bought pre-cut/chopped veg for the first time in my life. The endless time as the cutting board made me nuts. DH who is frugal wasn't happy, but he wasn't doing most of the labor, so he got to suck up the minor extra money for the time saving effort.

Will check that recipe out, thank you! I was way beyond my ability last saturday when I meal prepped. I made breakfast, lunch and dinner for the week all at once. I broke down too and got pre-chopped frozen butternut squash. Mainly because it's out of season here, and they are so tiny that it's not worth the effort to buy a whole one and cut it up. I will go back to buying fresh squash when they are back in season.

This is the mayo recipe that I made from the Whole 30 book.
Mayo
1 1/4 cup light olive oil l large egg (room temp) 1/2 tsp dried mustard powder 1/2 tsp salt Juice of 1/2 lemon (room temp)
Using a blender or an immersion blender
Mix 1/4 of olive oil, egg, dried mustard, and salt. While mixing slowly drizzle in remaining 1 cup of olive oil until emulsified. Slowly mix or blend lemon juice.
It really is so delicious. We have eaten it on baked potatoes, artichokes, and mixed it into tuna.

I’m on round two, day 15 I think This round seems much easier then last round, probably because I know what to expect and it’s not as intimidating. I really eat a lot of just normal foods, just unpackaged and fresh. For recipes I will often just do a google search for Whole30, then whatever main ingredient or meat I have. Last night dh wanted ribs. So I used the Whole30 ketchup I bought and didn’t care for as a bbq sauce. I made coleslaw with my mayo and dinner was great. Right now I have chicken thighs and veggies roasting in the oven.

I agree! I made tuna with the mayo and served it butter lettuce leaves....It was SO good!! It is also quick and easy. A lot of the Whole 30 recipes I have tried are delicious but man, it looks like a hurricane went through the kitchen when I am finished!

I agree! I made tuna with the mayo and served it butter lettuce leaves....It was SO good!! It is also quick and easy. A lot of the Whole 30 recipes I have tried are delicious but man, it looks like a hurricane went through the kitchen when I am finished!
I feel like our taste buds have been woken from a sugar/preservative coma. It feels like we are tasting things in a new way since our foods are clean and not clouded with soy, sugar and other stuff! Other people seem to think we are extremely limited in what we can eat, but I just feel like we are eating so much better. And it feels better too I have stew meat and hamburger waiting for me to make a choice for tonight's dinner. Hmmmm, as I'm saying that, I think I might do a hamburger patty in a lettuce leaf. Haven't had that in a long time And make the stew tomorrow. Ohhh, a spice that I use almost as often as I use my Himalayan pink salt and pepper is smokey/smoked paprika. It gives a nice color and a nice depth to a lot of different foods

I'm not currently doing Whole30 and I probably won't do another one ever, but I did make it 30 days and here's once of my favorite recipes:
Chicken Cacciatore 3 Tbsp oil 3 pounds chicken pieces I prefer boneless skinless thighs 1 cup chopped onion 2/3 cup green pepper, chopped (optional) 2 cloves garlic, minced 2-14 ounce cans diced tomatoes 15 ounce can tomato sauce 1-½ tsp salt ¼ tsp pepper ½ tsp allspice 2 bay leaves ½ tsp thyme 1/8 tsp cayenne pepper *Brown chicken in oil. Remove from pan. Add onion, green pepper and garlic, browning lightly. Add remainder of ingredients, replace chicken. Simmer uncovered for one hour, turning after thirty minutes. Tastes great over cooked zoodles or in alone in bowl form! Over pasta for regular people.
