We all want to try the magic chicken salad! i'm strangely obsessed with this thread i LOVE chicken salad gina Me too! I make it so many different ways a new ‘secret’ ingredient is always welcome!

I agree with OP's that it could be heavy cream. I also think it could be buttermilk! My sister made a pasta salad on Sunday and it looked like a sh!t ton of mayo, but it was buttermilk mixed with ranch dressing. It was so rich and creamy and delicious!

I love chicken salad. I also find it makes a great meal for serving a lot of people. What I usually do is make the base chicken with my dressing/mayo mixture. A friend years ago set me on to a way to cook the chicken that really is the most moist chicken ever. Then I put little bowls with almonds, craisins, celery, grapes etc - because I find most people have their own preferences, and this way they can add what they want. I serve with spinach so they can make a chicken salad salad, croissants and other bread. It is all very popular.
Now I want chicken salad!

I think we'd be surprised at what some restaurants/delis put in their food to make it taste good. Our local grocery story added egg salad to their deli. I picked up a small amount once to try on a sandwich. It was awesome. I started buying it each and every time I went, and started upping the quantity. Then my mom tried it, loved it and started buying it. We couldn't figure out what made theirs so good. My mom finally asked once if they had an ingredient/recipe list for it. It had sugar in it! WTH? Does anyone else put sugar in their egg salad? I never would have thought, and was so disappointed. Talk about hidden calories. Not saying that's what's in that chicken salad, but the egg salad woke me up to what can be hidden. I don't use sugar in my egg salad, but ketchup! Just a little bit, gives it that little sweet taste but not overly so. Maybe there is ketchup and whipped cream in that chicken salad!
