I make this version... I was skeptical but after tasting...YUM!
LEMON AVOCADO MOUSSE
This healthy dessert is super easy to make, a great one to get the kids to help with!
Ingredients
2 ripe avocados 2 lemons- juice+ zest 1/4 cup maple syrup tiny dash of salt Instructions
Blend all ingredients above in a food processor or blender. Serve fresh. Serves 4

This is my list of staples my picky 14 yo will eat that I keep on hand for weekends. Not the healthiest but no different than what the school serves.

I find the kids eat less in the summer. School breaks that sort of dictate when to snack are gone and the kids are busy with other things.
FYI Costco sells a G/F non-fried healthier (because it isn’t fried) ramen. It’s in a package with about 10 ramen blocks. Dd throws them into boiling water for 2-3 min, drains and adds some low sodium soy sauce and pan fried tofu (that i keep in the fridge) and veg and she loves it.
