I've been craving bean tostadas, so bean tostadas it will be. Hmmm is there a recipe for bean tostadas? Do they happen to use left over beans?

hop2 glad you’re home scrapmaven hope they move you up PolarGreen12 hope your dad continues to improve. Your scalp treatment sounds heavenly leannec beautiful picture. You look so healthy Had my soup kitchen day which took 6 hours! Usually takes 2 1/2 to 3. Long day. Then we all went to lunch for tacos. I was going to make chicken tonight but that’s what I made at the soup kitchen and I just can’t eat it. It’s only me so I had cherries & wine It was my day to bring dinner to my friend’s family who just passed away. It was so hard to drive up to her house. It’s her dream house. I’m not sure they’ll stay. Her dh just cried. It breaks my heart. Dh is golfing in a pro-am and they came in 2nd so I’m anxious to hear what the prize is. He’s never done one of these before so we don’t know what to expect.

I've been craving bean tostadas, so bean tostadas it will be. Hmmm is there a recipe for bean tostadas? Do they happen to use left over beans? You can absolutely use leftover beans. I use refried pinto beans, but you can use black beans or really whatever kind. Drain off liquid, mash them up as smooth as you like, season if you wish. Spread beans on tostada shells (I buy ready made, but you can fry corn tortillas until crispy). Sprinkle shredded cheese on top (I use mild cheddar). Then put them under the broiler or in a hot (400) oven until the cheese is melted and bubbly (5 minutes tops). Then top with choice of toppings. I use shredded lettuce, diced tomatoes and onions, and hot sauce. You can add guacamole, jalapenos, sour cream, cilantro, etc... If you want, add cooked shredded chicken or taco meat over beans for meat tostadas. Think of them as flat tacos, just pile whatever you want. on the shells.

Can I just say.... I AM SICK OF COOKING!!!!!!! Trying to low carb and can't make what I want, which of course is carbs. I definitely do not like zoodles. I especially don't want them 4 nights in a row. I'm ready to dive into some bread or pasta, but have held back so far...LOL. Anyone else doing low carb? What are you eating?

Can I just say.... I AM SICK OF COOKING!!!!!!! Trying to low carb and can't make what I want, which of course is carbs. I definitely do not like zoodles. I especially don't want them 4 nights in a row. I'm ready to dive into some bread or pasta, but have held back so far...LOL. Anyone else doing low carb? What are you eating? I think my dad is doing low carb, but then he cheats. He doesn’t eat rice, sugar, bread, pasta or potatoes but it changes daily. He is served a lot of vegetables and very plain food. Bbq sauce has carbs. As do onions and ketchup.

Have you tried rice noodles or cellophane noodles?, not low carb but not flour/wheat.
