I am probably totally overthinking this. But dh has invited someone from work over for dinner. This is the first time ever. They have worked together for at least 3 years. She just had her first baby and they are bringing the baby (we have 4 kids). The thing that is throwing me off is the husband doesn't eat fruit, tomatoes, or peppers. All the seasonal recipes that I keep pulling have fruit of some kind! It will be 4 adults and 3 of my kids are of eating food age. I want something not too complicated, but nice!

I would do tray of mixed roast vegetables (potatoes, carrots, onion, zucchini, asparagus, broccoli) and either a roast chicken or pork tenderloin. Desert depends on how fancy you want to get: cookies, brownies, ice cream.

For the entree how about enchiladas (with out tomatoes), or a taco bar, or white cheese chicken lasagna.

We are having make-your-own pizzas tonight. That would be fun to do with kids, but only if you have the oven space to do several personal sized pizzas at a time. Otherwise, I'd probably do something that can be customized for each person. A taco bar, baked potatoes and soup, baked chicken with a few sides to choose from... Keep it simple and focus on the friendship!

My go to meal for guests, particularly if I don't know them well and don't know if they are boring or adventurous eaters, is a roast (lamb usually, otherwise chicken/pork/beef) and a ton of roast veggies. There are millions of things you can cook with no fruit, tomatoes or peppers. It would be harder for me to make something WITH those things in it than without!

I would roast a chicken and serve it w/stuffed potatoes and green beans w/bacon and onion. For a starter you could do a butternut squash soup for the season. Dessert can be anything w/chocolate. How about a chocolate mousse?

I second the roast meat of choice,roast veggies and salad ...then serve it all help yourself style! If I have roast lamb ( like a good Aussie) then I also like to serve it Greekstyle with tzatziki on the side as well as gravy. If you have kids you can never go wrong with icecream for dessert!- maybe a couple of special flavours for fun!

When I saw the title, my first thought was tacos...the answer is always tacos.
After I read through it, you could serve a variety of taco/burrito shells with meat, beans, cheese, and other toppings like salsa, peppers and onions, and stuff that people can take or leave.
My next thought was pasta with a cream sauce and a tomato sauce for people to choose (or skip and just have plain noodles.) You could make a salad and garlic bread to go with it.
I would’ve never thought about a lamb roast, but I’m not a good cook and I don’t enjoy cooking—so I wouldn’t attempt a roast. I’d end up undercooking it or over cooking it because of my fear of undercooking it.

Until you know their food preferences, I'd keep it simple. I'm often surprised at the people that don't like Mexican food. I'd have chicken, potatoes and a veggie followed by dessert. Butternut squash soup sounds delicious to me, but my DH would pass as he doesn't eat squash in any way, shape or form.

When I’m postpartum and breastfeeding pretty much I want all the carbs. I remember feeling so hungry for the first three months. So I would make sure to serve a side with potatoes/pasta/rice and not just bread alone because it’s not as socially acceptable to eat an entire loaf at one sitting as it is to have a second of a side dish during a meal.

I'm interested in knowing what you ended up making and how it went too. I hope you guys had a great time. I'm a super picky eater, and wouldn't like half the things listed here as ideas for safe meals. I am horrified at the idea of eating lamb for some reason (and most "other" meats honestly besides beef, chicken and pork), very little Mexican food I like because I hate beans and I'm the biggest spice wimp on the planet. I don't like most sauces or gravy's, mushrooms, corn or bread to name a few. I hate eating places that I don't have any "control" over the menu (like a restaurant where I'm picking what I want and paying for it). I don't want to impose my pickiness on other people, I know it's unreasonable, and I'd just take tiny servings of things I don't like and mostly eat the things I do like (like potatoes ).

It was good! Dh smoked a brisket, bacon wrapped corn, and coleslaw. I ordered cheddar biscuits from good eggs (they arrived frozen) so baked them fresh. We did a cheese, cured meats, and crackers spread for appetizers. The couple was very sweet. This was the first time they had been out to someone's house since the baby arrived (4 weeks ago). They were very cute and put up with the chaos of our 4 kids well. And I was able to give them a bunch of baby stuff that they were super excited about. They also brought some amazing desserts from a local place that were a huge hit!

I agree -- that was the best chicken. DH wants that at the top of the dinner rotation now. beaglemom Sounds like a fun time!
