Pistachio Salad 1 20 oz can of crushed pineapple 1 pkg jello instant pistachio pudding (4 serving size) 1 cup marshmallows 1 regular sized container of cool whip Mix pineapple (with juice) and pudding. Add pudding and stir. Fold in marshmallows and then cool whip. Let set for 1 hour (or more) before serving. I add a few drops of green food coloring to make it greener at Christmas time I cannot get over something like this being called a salad! I’m asking seriously here not being snarky - would you really serve this with ham and potatoes? It isn’t something we would serve (at all) in Australia.

I havent read all the responses and I am sure after 2pages there are lots of great ideas. I just want to say you enjoy food not only by taste but by how it looks. So think about what the plate of food will look like. Aim for a rainbow of colors, this helps to cover all the nutrients. I think with pink ham and white potatoes you need a big POP of color, so go green in some form.

I was off my game last night when I made baked fish, mashed potatoes, and coleslaw. I was thinking how ugly it looked (even though it was delicious!)

I'm a born and bred Midwesterner and I don't get it either. I mean I've heard them called salads but they are always served and thought of as desserts. IME if you are asked to bring a salad, it means a green salad. You'd only bring a "salad" like this if asked to bring a dessert. And honestly even then only if you are like my mother's age. Now that doesn't mean other people might not enjoy it, they are just not big around here except with older people.

I’m originally from central Wisconsin and this dish shows up at every family gathering, church supper, funeral, and holiday I’ve ever been to. I think salad means it has something that grew on a plant mixed with other things. It’s just what people call it.

Costco sells a huge bag of a kale salad with poppyseed dressing, dried cranberries and sunflower seeds. The kale holds up well to dressing without getting gross, so you could dress it in advance of serving. Kale always seems like a good weather vegetable to me. This stuff is so good - I don’t like kale but this stuff is magic. agree-I made this for my daughter in law's baby shower and I was shocked at how it got gobbled up. I don't really like kale either-and i like this salad a lot the broccoli salad many here have mentioned is a fan favorite as well

Greek salad is easy ahead of time. I use coloured peppers to make it pretty. Or Greek pasta salad?

One year I did a brussel sprout slaw salad with a similar menu I’m sure I got the recipe here. It had shredded brussel sprouts, dried cranberries, feta cheese, and a lemon vinaigrette. It was so delicious and holds up to waiting a bit (unlike a regular dressed salad). I’d serve aomethig similar and provide punch cups for people to put it in so the dressing doesn’t mix with other foods for people who prefer that. I'd go with a salad that consists of vegetables for sure. In my experience a lot of pot lucks consist of overly heavy, starchy or sweet food and it's so disappointing.

camcas, Lol, no Cool Whip is NOT processed whipped cream. It is a COMPLETE concoction of syrups, oils and chemicals made to look like whipped cream. It doesn't even taste like it. The non dairy versions don't even have dairy products IN them. I've nothing against anyone who wants to eat it, or who does www.eatthis.com/cool-whip-ingredients/

Thank you, thank you, thank you for all the ideas! Romaine is back and I'm making a salad with poppyseed dressing that always is popular. I'm making a potato salad for me. And that pistachio salad sounds interesting. It's fun to see all the regional favorites.

No clue why it's called salad - I didn't name it. Yes, I'd serve it with ham and potatoes. In fact, we put it out for Christmas dinner with our ham. The pineapple goes nicely with the ham.

When my fiance’s Mother passed away in Nebraska, the women of the church she had attended put together a beautiful buffet for after the service and my fiancé had no idea they were doing it. It was very kind of them and his cousin said that it was expected of church members to do this. There was a long line of various salads, which I love, and I took a small piece of ham and filled the rest of my plate with a spoonful from each salad bowl. I’m sure my face showed my shock when I took a bite of one of the salads that was sweet. It was so much like a desert that I wondered if it had been put out by mistake and should have been held until the dessert was served. Don’t get me wrong, it was delicious, but after eating a bite of vinegary 3-bean salad, it was a shock to my palate. When I was helping to clean up afterwards, someone asked for that recipe so I eavesdropped on their conversation. I was anxious to know what the heck was in it. It was a familiar taste, but so out of the norm for what I was expecting, I couldn’t place it. It was a Snicker’s Salad! I was tasting chopped up Snicker’s bars! And like I said, it was amazing, but so not what my mind groups in with a “salad” table where everything else was savory. I love pistachios, so I’m copying your recipe, but it will be a desert for me. Good guess! I am! It is sweet, but the pineapple goes well with the ham at Christmas or Easter! But, it could definitely as dessert.

But still served like a salad and not a dessert LOL yes, if you were making a meat and three you would count this as one of your three. It goes on the main plate not the dessert plate and is served with the main dishes not after. Yup. Wisconsin is weird maybe?
