I have never used kit clubs because I am too picky with my products and I have not seen one that consistently offers kits I want. I tend to like very coordinated kits (that mainly stick to a single line and limited color palette). If yours gave choices (between two different kits and/or to skip a month), that would give me more flexibility and I would be more likely to join. Giving people choices would require more advanced planning on your part though, so keep that in mind.
There definitely appears to be room in the market for a 12x12 kit club if you have the risk tolerance for it. If you decide to go for it, definitely post here for feedback about what lines to include, design team calls, etc. I think you're smart to get all the feedback from potential buyers on the front end, and continuing to do that throughout the process can only help!

Consider the type of product you will be offering. For me, I like exclusive product. I can buy paper collections online myself, getting exactly what I want at a more affordable rate. I can't buy products just anywhere that are exclusive. Because of this, I tend to lean towards Ali Edwards, Kelly Purkey, Feed Your Craft, Felicity Jane, Elle's Studio, Citrus Twist's pocket life/life crafted kit and even Studio Calico's DK from time to time. Hip kit doesn't do it for me because even though they offer exclusive items, or have kits that are heavily exclusive, they don't do it consistently enough for me to subscribe, but I will be them on a one-off. Even though most of the kits I mentioned are geared/designed for pocket page memory keeping and/or TN, they are versatile enough that I use them on larger layouts too.
