I was watching something yesterday and they were having the most delicious looking salad. I love a good salad, but want to try some new things. Had one with chickpeas a few months ago, it was awesome.
Looking for some great new salad ideas so post your favorites, recipes even better.

I make a very very simple pasta salad...
tri color rotini pepperoni shredded sharp cheese black olives artichokes (packed in water)
Then I use a Wegman's parmesan italian dressing...
Just very simple..I have tossed in some chickpeas and some diced green peppers

I make Taco Salads a couple times a month. Pretty basic.
I also use arugula and spring mix together for a base, then top with roasted sweet potato, pepitas, red onions, and a basic vinaigrette.

The second one looks delicious! Do you think removing the rice would change the flavor too drastically? OP, one of our favorite meals is a chicken, pear, spinach, and goat cheese salad (we grate it) with toasted chopped pecans or almonds and a balsamic vinaigrette dressing. The chicken is sautéed with salt & garlic in a tiny bit of olive oil. This combination of flavors is amazing and DH, who is not a big fan of salads, devours it. Eta: we prefer it with the chicken warm because it melts the goat cheese a bit and it mixes with the dressing to spread the flavor around. A similar salad uses flank steak and apples. Edited because we we had this salad tonight and I had mixed up the spices used.

I had a Mediterranean salad at a small cafe a couple days ago that was fantastic. I plan to buy the ingredients to have on hand this summer so I can make one any time. I just copied the description from the menu. It included romaine lettuce, mixed greens, tomato, pepper, cucumber, red onion, feta, kalamata olive, parmesan with greek dressing.

I made this one the other night and my kids loved it so much:
Mixed spring greens / spinach / arugula Sliced pear Blue cheese Red onion Sliced almonds Shelled edamame Creamy poppy seed dressing.

We have salad almost every night with dinner and I’ve found the key to not getting bored is mixing different textures in addition to flavours and colours... so I try to include something creamy (like a soft cheese or avocado), plus something non-vegetable crunchy (like sunflower seeds or nuts).

One of my favorite salads is from Panera. It’s their Green Goddess salad. Greens, pickled onions, avacado, boiled eggs, chicken... I can’t remember what else, but I like the textures. And the pickled onion adds a little something extra that I love.

Most of my favorite salads don't have lettuce in them. Cauliflower Cucumber Corn Salad2 cups cauliflower florets 2 small cucumbers, sliced 1/2 red pepper, cubed 2-3 green onions, finely cut 1-2 cups grilled corn kernels (cut from two cobs) 1-2 TBSP fresh dill salt and pepper, to taste Cut your cauliflower into small florets. Slice cucumber into thin slices. Cube the red pepper. Thinly chop the green onions. Mix everything. Toss with lemon vinaigrette or ranch style dressing. Crunchy Cauliflower Pea Salad1 cup peas 2 cups chopped cauliflower 1/2 cup chopped celery 1 cup peanuts 1/4 cup chopped greens onions 4-6 rashers bacon cooked and crumbled 1 cup craisins 1/4 cup mayonaise 1 Tbsp vinegar ground pepper to taste 1 tsp soy sauce 1 tsp Worcestershire sauce Mix mayo and seasonings before tossing with salad.

Since giving up meat due to allergies I have a salad every day. Here are my favorite toppings that I mix and match...
Chickpeas Hard boiled eggs Sunflower seeds Pumpkin seeds Pomegranate seeds Green onion Cheese Raddishes Artichoke hearts Hearts of palm Red onion Bell pepper Black beans Red kidney beans
I love to mix spring mix, bib lettuce, radicchio, purple cabbage, spinach, and kale together.
I love to make a vegan ranch and also buy Good Foods and Bolthouse Farms salad dressings at Sprouts.
