I'd love to hear your best way to prepare frozen green beans. Something other than boiling/steaming them, please!
Dinner tonight is roasted sweet potatoes, vegetarian "meatless" loaf, and I want something green. All we have in the house is frozen green beans, which I normally use in stir fries, but that just doesn't go with the other things tonight.

Wrap a bundle of 5-6 green beans in a piece of bacon and bake in the oven....sooooo yummy!!

I was thinking about some sort of sauteed or roasted dish... do you use frozen beans when you make those dishes? If I was using fresh ones I'd parboil them and blanch them... so with frozen should I just boil them to thaw and drain and then saute??

If you run them under warm water for a minute and then make sure that you drain them well, can't you do just about everything you would with fresh?
I like to saute green beans. Throw in some mushrooms and a teeny bit of onion and garlic and that would be good...

Sauté the beans in a bit of butter and add some Craisins and almonds. Yum!

I sauté fresh green beans with some garlic, white wine, lemon juice, salt and pepper.

Guess I wasn't sure if I needed to parboil/drain/blanch/whatever! Thanks for the ideas! Going to look through my cupboards and see what we have... doubt we have almonds or craisins, but I can find something that will work.

Have you made tempeh bacon? It's super!! No, I haven't! Will give it a look. We also like smoked tofu... it's denser than regular firm tofu and has a nice texture. We used to slice it and warm it up in a pan and use it in place of peameal/Canadian bacon on things. BLTs are a weekly summer dinner here.

Ok, so speaking of facon...my SO makes blue cheese stuffed dates wrapped in facon and serves it with a fresh raspberry and maple syrup dipping sauce. You have to brush the facon with oil before you bake it or it dries out.

Add some crushed garlic and bacon (or facon). Bake at 350F for 30-ish minutes. Squeeze juice of half a lemon over them right before serving. Yum!

I don't always need to request vegetarian recipes because I can often substitute/modify something that has meat in it to make it vegetarian.

- Sauteed with sesame seeds, balsamic vinegar, olive oil & garlic - Sauteed with Szechuan/Asian spices - Sauteed with a little butter and a packet of those almond salad add-ins (I forget what they're called, but they come in a pouch and there's different flavor varieties, like Ranch)
