I know that by some standards our temps aren’t really cold, but by OUR standards, we freezing! LOL. It’s below 80 y’all!
Anyway, I’ve been craving soup, chili and beans, most of which my DH can’t have because of his CKD. His most recent test results came back really good, so we decided to try some of our favorite recipes modified for his requirements.
Today I made red beans and rice, one of my all time comfort meals and one of his top 5 meals. I soaked the beans overnight, then changed the water this morning and soaked them for a bit longer.
I sprayed the IP pot with Pam, added the beans (small red beans) and then added my veggies: 2 onions, cut into 1-1.5 inch pieces top 1/3 of a bunch of celery, including the leaves 2 large bells, orange and red, I think 3 heaping tablespoons of minced garlic in olive oil 3 large bay leaves enough water to cover everything
IP for 30 minutes, then leave on warm until ready to eat.
Simple, right?
It was so good. Not my Nornie’s, but still good. I froze 2 single and one double serving size, after DH and I got ours out. I think that between the soaking and not adding any meat or meat stock, DH shouldn’t take a bigger phosphorus hit than he would have taken if he’s had a meal with meat.

I haven’t made anything in my IP for two years as we were living in the U.K. and it has a US plug. It’s sitting in the basement right now but I was thinking of using it this week. Rice and beans sounds good. Did you use aduki beans? Also did you add rice to the other ingredients or make it separately? Thanks:)

Someone shared a balsamic chicken thigh recipe here the other day that I’m going to try. That was mine! 😃 I made that a few nights ago. Tonight I just got done putting up 5 quarts of chicken broth made in my 8 qt IP. I’m hoping to make a batch of lentil soup and one of stuffed cabbage soup in the next few days, with the plan to freeze a lot of it for lunches. I made BBQ Meatloaf last week in my IP - it is always a hit. I use my pressure cookers all year long. I hate heating the house up in the summer by using the oven, so use my IPs frequently. That and my new smoker grill get used far more often than the oven.

Thanks:) I used small red beans and they could have been aduki beans but were most likely small kidney beans. I made the rice separately. I Always do when I make red beans because I always freeze some and I don’t like rice when it freezes in a liquid. Marcy

I mostly use the IP in the summer so that we don't heat the house up during the summer (no AC).
The things I cook most in it are: - Butter Chicken - Pulled bbq chicken - Mashed potatoes (in winter, b/c mashed potatoes are a winter food for us) - Pot roast with vegetables, also in winter

I made broccoli cheese soup and butternut squash apple soup. Both were very good but no one else will eat the squash soup besides the baby. I'm going to make it again and take it to MIL because I know she will like it.
Chicken fajita soup is next.

I made Navy bean soup Monday. It was really good. I’ll probably make split pea soup today or tomorrow. I had dd pick up two ham hooks at the butcher shop and they have a lot of meat on them.

I used my IP quite a bit during our kitchen reno. My favorite meal to make was pasta with tomato sauce (I used the canned Hunts tomato sauce) with diced bell peppers, onions and feta cheese. Yum! I am looking forward to making soup again..... my faves are split pea soup, butternut squash soup, and carrot ginger soup.

Making chili this weekend. Can’t wait! Below 80 is fall to me - but on Saturday our high is only 68!! ❄️❄️❄️😂
I’m also looking for a chickpea and dumplings or veggie and dumplings soup recipe that is as good as the chicken and dumplings I used to make this time of year.

I made Mississippi pot roast in mine on Monday, sooooooo good! That is one of my favorite recipes ever. Tomorrow night I am making Creamy Italian Chicken. OMG so good. I don't make it near enough. IP Creamy Italian Chicken If you make it, double the sauce. Serve over egg noodles. YUM!

Now that we are living in a motorhome I find that I use my IP even more (gotten save the propane for the furnace). I made this Vegan Split Pea soup last week and topped it with homemade croutons. So yummy and warming. I skipped the smoked paprika and cayenne and used two chipotle peppers in adobo sauce chopped. I also love just a bowl of beans. These Fiasco Beans from Heidi Swanson are so simple but, just awesome. If you can get heirloom beans from Rancho Gordo they are worth the cost. I love how you can mix up the toppings to get different textures and flavors.
