I love it PolarGreen12 and it looks pretty big already. This is a perfect time to finish it. Yarn is keeping me sane right now. It’ll be like a twin/ full size once it’s done. I have about 5 or 6 more bands of colors left I think to finish.

That is a pretty blanket, PolarGreen12. It is a spicy chicken night. We're having chicken fajita pasta. Pizza will wait. I wrote up 14 days worth of menus, so that we could ensure that we had enough groceries for 2 weeks, sans milk that we can get at the local drive thru dairy. There might be a quick veggie run next week. Other than that we're stocked.

I got up early and put moose in the crockpot (love that visual!) will make rice and green beans later to go with it.
Kait has been on a donut kick. She has this little donut maker (like a waffle iron) that makes the cutest little donuts. I think she is making apple cider donuts today.
I am doing another Meals on Wheels Family Edition today to feed my boys. They get food and I get to see there sweet faces. Win win!!
The wind finally stopped blowing so I am hoping for an afternoon walk. I need to move.
Also I got the four puzzles I ordered last week. I may start on one of those. I am not feeling very bored today.
I also did an online grocery order that will be ready on Thursday. Last time I checked I couldn't get a spot at all so Thursday is cool.

I'll probably let my brain win today. My brain wins most days, it's the nights when the belly takes over. Today was my uncle's funeral back in Australia. I'm so sorry your family isn't able to take comfort offered by following their normal traditions at a time like this. Find a random memory from way back that will make you smile and share it with a person in the memory. Love this suggestion. Dh just told me he thinks he has to shut down his business now and lay off his one employee and try to collect unemployment himself. Sigh. I'm so sorry and hope it won't be too difficult to get going again on the other side. put moose in the crockpot (love that visual!) I picture some pretty big kitchen appliances every time you have moose. Like a hot tub sized crockpot. DH came home with a big bowl of Meyer lemons from a friend's tree, so we are having Meyer lemon & artichoke pasta with Meyer lemon roasted broccolini. I have a lot of Romaine, so will also make a couple salads. Caesar for the kids and a Romaine, arugula and spinach toss for DH & I.

I made chili in the crockpot. I have broccolini & crescent rolls to go with it. I really don’t feel like eating it though. But I will because I don’t feel like making anything else. I need the weather to warm back up so I can work in my yard again. Not that there isn’t plenty to do in the house. I’ve just lost my mojo the last 2 days. sueg so sorry for your loss I’ve spent a stupid amount of time looking at Tiger King memes today. PolarGreen12 that blanket looks great and appears to be a nice weight. I’ve never knitted. Wish I knew how now.

Late checking in today, but finally here! I've been having the most unproductive day ever. Dealing with another flare of foot pain, so haven't slept soundly in a few nights. This morning I just couldn't get going so I went back to bed at noon and napped for 2.5 hrs. Nice bonus was the weather was overcast when I went to bed, but the front had come through so I woke up to beautiful skies and cooler temps. If only it worked that way all the time! I've decided that the day is too far gone to even attempt productivity, so am just relaxing. Dinner tonight will be rechauffe of last night's dinner I picked up. The food is great, but it did confirm that I'm just not a casserole person. DD took the second pan home and DH will eat the rest of our pan. DH's favorite was the sausage tart (which turns out to be a 9" quiche type dish!) Not sure I'll try it as my acid reflux is acting up from the anti-inflammatories. May just have a bowl of egg noodles instead. I know I just stated that I'm not a casserole person, but this one does sound good. Any chance you would share the recipe? Sounds like the meat is cut up small to fit into a crock pot, but I always envision the stacks of camel pots we would see in the markets in Qatar! Since I started making it, she has changed the instructions to say you can sub in butter instead. No, you can’t. It will taste bland and non-Asian. (2) you can use whatever cooked meat you want. One time I used bacon because it was all I had here. Also, I use all kinds of veggies besides onions, garlic, peas, and carrots ... I always add some cabbage or spinach, plus zucchini (we love it) and anything I’m trying to get rid of. (3) Start cooking the carrots first. If you don’t, they’ll still be hard when you serve the fried rice. (Unless you like them that way.) Let them stir fry for about five minutes, then add the rest of the veggies except the frozen peas, and carry on. I add the peas at the last minute so they don’t get mushy. (4) top with toasted sesame seeds and the green part of green onions, if you have that stuff. Sometimes I toss the bottom part of the green onions into the stir-fry. ETA (5) important! Cook the steamed rice early in the day and chill until ready to make the fried rice. It works much better that way.

Rainy weather today gave me an excuse to skip working in the yard. While the progress on spring chores gives me a sense of accomplishment, being out there is really a mental escape from all things virus-related. I'm not burying my head in the sand but like jeremysgirl, the constant onslaught is wearing on me. I find I'm visiting social media less and less. I caught up on my ironing, installed the new Cameo4 I bought a month ago but hadn't had time to even unpack and took a long walk with DH after the weather cleared. It's been a good day! Dinner tonight will be spaghetti with grilled Italian sausage. We also have a small salad to go with it. Tomorrow I'll brave the grocery store for milk and fresh fruits/vegetables. We're pretty well stocked otherwise.

Rechauffe turkey breast, mashed potatoes, gravy, broccoli. What is Rechauffe turkey breast? Edit: After seeing this word several times I looked it up. I thought it was a new recipe for turkey haha! I should say we're having rechauffe stroganoff tonight. I learned a new word, haha! We are having leftover beef stroganoff with rice. Does anyone have a way of making frozen vegetables taste better? We bought one of those bird's eye combo meals that has veg, pasta, and protein and you cook it in a skillet. It was so bland. I had to doctor that stuff up with a ton of seasonings and CHEESE. Anyway, I have some frozen veg from costco. I usually make fresh vegetables.

Do you just wing this, or do you have a recipe to share? I have lemons, jar of artichokes and pasta. It would be a nice meal later this week. I wing it and have made adjustments to make it WFPB friendly but it is something like this: - Cook linguine, spaghetti or angel hair pasta, drain and toss with a bit of olive oil (1 TBSPish)
- juice and zest 1-2 lemons (I like 1/2 cup of juice), slice 4-5 cloves garlic, chop 1 jar artichoke hearts (optional 1 cup frozen peas, chopped asparagus, broccolini), 1/2 cup white wine and/or broth
- over medium heat saute garlic & zest in 1 TBSP olive oil for 1-2 minutes, add all the other ingredients and saute until heated through, adding salt & pepper to taste
- toss pasta into sauce, add 1/4 cup parmesan cheese or nutritional yeast and serve
If I want it creamier, I add 1/2 C coconut milk for a WFPB version or 1-2 TBSP cream cheese. I'll also toss in 1/4 c fresh dill at the end if I have some.

My Fried Rice Recipe
It all depends on what I have in the fridge. Gotta have cold rice. All the amounts depend on what size your family is and what you have in the fridge. I start by heating up some oil and scrambling some eggs, remove from pan and set aside. Then I always start with onion and will add whatever bits and pieces of veg I have in the fridge like broccoli, zucchini, carrot, mushroom, celery, cabbage, bean sprouts. I also add garlic and ginger at this point. After they have cooked for a few minutes I will add my meat, which is usually leftover and already cooked. Shredded or cubed chicken, beef, pork, spam (is really good- but I treat it like raw meat) If you start with raw meat I'd add it with the onion. I add more oil or water when it gets too dry. Add your cold rice and soy sauce to taste. Your heat should be high, we're frying not steaming. Just keep tossing and tasting for soy sauce. Add some frozen green peas and the chopped up scrambled eggs. If you have it, sliced water chestnuts are good too. Just before serving I season with sesame oil. It's strong so be careful. I also garnish with chopped green onions.
My family loves this, I hope yours will too!
Edit: This pretty much how I make lo mein as well, only sub noodles for the rice.

eeeek! destined2bmom, I forgot to add that important thing that SunnySmile said ... cook the rice in advance, the day before or in the morning. Then chill it till you’re ready to make dinner. It makes much better fried rice that way, rather than using freshly steamed rice. SunnySmile, you are an excellent addition to the dinner tribe.

I am making halibut and I even bought food for tomorrow so I don’t have to shop again. My dad likes to walk the grocery store and I tried to get him to not come in and we go for a little walk around the nature sanctuary. He agreed not to go in but went to the drugstore and they WOULDN’T LET HIM IN!!! Seniors shopping hour is at 8 am!!! I am doing my best to keep him healthy but today was just one day.
