I had a video appointment. Sorry to be late posting the thread. We're on our last day of cleanup at mil's house. I suspect much puzzle and much "OMG, why did she keep it" will happen today. Dh has rechauffe Chinese food for dinner.

I've been making cookies all morning. I made some white chocolate macadamia nut cookies. And I scored some espresso chips. A little experimenting and I've come up with this recipe. Perfect PMS Cookies 2 sticks butter softened 2 c white sugar 1 cup baking cocoa 3 eggs 1 t vanilla 1 t baking soda 3/4 t baking powder 1/2 t salt 2 1/2 c flour 1 bag Nestle espresso chips Bake at 350 convection for 12 minutes These are good! Very decadent. They are perfect with a cup of coffee. Jeremy is just getting ready to leave for Ohio. And I am hanging out. My granddog is coming over. There will be much crochet. Tonight I will finally make that sausage and pepper risotto. We ended up with a pizza last night.

I was planning on having DS bring me home a mini MOD pizza from work until you mentioned Chinese food and reactivated my salivary glands for that!! Anyway, it will be something simple and not involving turning the (HOT!) oven on. Yesterday, DS and I went to Madison trade back cars with DD so that was nice. I just saw DD Monday on my monthly hospital clinic visit but DD and DS hadn't seen each other in quite a while so it was nice for them. Masks on and at a distance it was but that's cool with DS the not touchy feely guy (spectrum). They were "huddled" together "whispering secrets" which was nice to see again. Or I'm in for it! DD borrowed my car to take a older disabled client to her mother's funeral. (DD car tiny) The poor lady just lost her father 6 (?) weeks ago. (not covid) It ended up being very helpful for DD to have my Subaru. Any services were held outside by the grave. The plots around/beside were empty so the powers that be said "hey you have a Subaru!" and had them pull right up so client could stay safer in car, be cooled by a/c and still be "part of it". It made my heart happy that something so simple, the borrowing of a car, made such a difference! My big adventure today will be curbside pickup of birdseed and suet. Those birds are eating me out of house and home. The babies aren't babies anymore and it's multiplied my "customers" many-fold. Enjoy you weekend and holiday, peas! Or as I call it in my SIP house "same ole same ole". ETA bklyngal62 I am so sorry. My best wishes to your niece.

I’m going to make dd’s recipe for “pastalaya”. She’s still not feeling great. I have a four day weekend and am happy to have the time off. jeremysgirl I went to Walmart after I saw your FB post this morning. I found some espresso chips but they’re not Nestles and I think they have artificial flavor. I am planning to get ds to bake cookies 😊

Dinner here tonight is some plaice (fish) fillets, which I have dredged in seasoned flour, quickly fried. These will be served with potato salad and caprese salad. There may also be some white wine. Good news: My wool has been located. The delivery driver put it into the wrong mailbox, and when the mailbox owner checked his mail today, he put it into my mailbox. I have let the delivery company know, and also expressed my displeasure that the driver couldn't manage to match the name on the parcel with the name on the mailbox.

Happy Friday! Didn't get around to posting yesterday as I spent the afternoon with DD at the car dealer. I was too exhausted to do more than pop a frozen pizza in the oven and some tater tots for DH. Weird and unhealthy, but no one starved or died! DD's 10 yr old car needed some very expensive repairs and so it was time for her to trade. This was the first car she has bought entirely on her own and she nearly drove me nuts! She ended up with a 2017 lease return that looks brand new! At the dealer I was so impressed with her negotiation skills. She managed to get them to beat the pre-approved credit union rate by 1%! Girl drives a hard bargain. I see so much of my dad in her. When she asked me to go with her, she specified her dad couldn't come "because he doesn't negotiate. He just says how much and writes the check." And she's absolutely correct! Not sure what dinner will be tonight. I have some steak and kofta to grill, but it is hot as hades with high humidity and Saharan dust to boot. Not sure if the grilling will happen or not. The afternoon will be spent working on my quilt. Got nothing done yesterday and this top needs to be completed by early next week. Gotta get busy!

I put our leftover carnitas meat in the freezer a couple of weeks ago, so we will be having hash tonight with fruit smoothies and probably some form of eggs because DH really loves eggs. DH is working on healthier eating in general, but you know how that goes - then all you can think about is junk food. LOL. He is NOT all about sugar substitutes but is not eating processed right now, so my concession is putting actual sugar in this dessert. I'll meet him halfway since he has been really trying and doing great with no soda/junk food and focusing on a protein/fruits/veggies. He is NOT a veggie lover, so this has been hard!

My dd's are coming over for dinner tonight ... possibly dd#1's boyfriend as well ... we will be ordering takeout from our fav Italian restaurant I'll be having a pasta dish that includes smoked salmon, sundried tomatoes, onion, and peas in a garlic and olive oil sauce ... soooooo good I know that many of you would ask for no peas

It made my heart happy that something so simple, the borrowing of a car, made such a difference! Loved that your kids got to see each other and your DD's client was able to be graveside for the funeral. Found out yesterday my niece (who is the daughter I never had) has the virus. I really hope she has a milder case and is able to stay out of hospital. My wool has been located. Was hoping it was an error like this. So annoying. Girl drives a hard bargain. I'm impressed! I hate, hate, hate car shopping but love watching the scramble as DH walks away from negotiating. I'm silly excited about dinner. After all the charcuterie board discussion last week I put a charcuterie board and appetizer dinner on the menu for tonight.. The appetizers will be prosciutto wrapped asparagus and almond stuffed bacon wrapped dates.

Saw the dr for my dog bite scar. The scar tissue is getting really hard and pulling that lip way up compared to the other side. She injected it and I had lots of bleeding so now I’m bruised and swollen. She also said no mask wearing today so I’m quarantining at home. No sure what dinner will be. No salty or spicy. bklyngal62 I hope your niece has a speedy recovery. scrapmaven don’t overdo it.

Well, don't leave us in suspense ~ what did she buy?? She bought a 2017 Mercedes GLE 350 4matic. It's a pretty blue with a Beige and Espresso interior with 29,000 miles. Car seriously looks brand new! Her first car was an ML, then she drove an Audi A4. She was ready to go back to an SUV and really did her homework to find the exact car she wanted. I'm impressed! I hate, hate, hate car shopping but love watching the scramble as DH walks away from negotiating. That negotiation dance can be fun if you are in to that! I watched my dad do it for years but was never very good myself when I was younger. Then I spent many years living in third world countries and really honed my skills bargaining in the local markets. Heck, I regularly negotiate the prices down at Home Goods! I love a good deal!

I've not participated in the dinner thread recently as I've taken a hiatus from cooking dinner. But I've reactivated my HomeChef subscription and unexpectedly received a HomeChef box today (didn't expect first one until next week). Unfortunately the dinner choices they preselected for us aren't exactly dinners I'd have chosen but we will have either Apricot Chicken with roasted potatoes and green beans or Margherita Chicken with pasta. Neither one seems very yummy but I'll pick one and make adjustments to the ingredients to appease the family. I think I'll pick the Apricot Chicken. HomeChef gave me a credit on a future box since I wasn't allowed to pick dinners we will actually eat.

Tonight we will be enjoying cheezie hamburgers, vegetables and the last of the Key lime pie. I didn’t know until this week that I liked this kind of pie. Running out the door again. We’re going to meet my stepmother for lunch on the patio at a seafood restaurant here in town. Dinner will be rechauffe beans and rice, I guess. Or whatever I feel like picking at. Kid now has black belt classes on Friday nights (that’s five nights/week of tae kwon do, folks) but I think he’ll go back to the other house afterwards. bklyngal62, wishing your niece a light case and an easy recovery.

I walked 7 miles in the heat and humidity this morning and, while it feels like an accomplishment, I'm kinda done for the day. We are cleaning up a bit around the house and relaxing today. I'll make a chicken thigh and veggie sheet pan dinner tonight. I made it last week and DH loved it.
bklyngal62, I'm thinking of your family and hoping your niece doesn't get too ill. jeremysgirl, those cookies sound so good!! Enjoy some peace and quiet this weekend. teddyw, ouch! I'm sorry. I hope you can rest this weekend. **GypsyGirl**, I could have used your DD's skills when I bought my car this fall. I was worn down by the process.

Happy Friday everyone! Sending good vibes and prayers for everyone's needs.
I've been totally MIA for the last two weeks, I was out of town, brought the oldest two grands home with me for a week and have been watching my sons dogs and chickens this week. June was a blur.... I accepted a job offer earlier this week and start on the 13th. so I have one more week to catch up and hopefully get some things accomplished. I'm so happy to be going back to work.
DH is at the ranch, so dinner will be snacky here. I have to go check on my sons dog this evening, so I might pick something up on the way.

We put a pork butt in the pellet grill at 830 am and at 645pm it is still not done- the recioe we used called for a 5 lb pork butt and ours is close to 7.5 lb. So, we are having fish sandwiches and pierogies. Pulled pork tomorrow!

I signed up for Blue Apron last week. I had previously done Hello Fresh and will be comparing several companies to find one that suits me the best.
Tonight is the second serving of Turkey Kofta & Tzatziki-Dressed Salad. Since these meal plans come as a 2-servings minimum, I am cooking every other day and eating leftovers on the second day. You could easily just cook half of the ingredients so that you are having a freshly cooked meal each night, but I don't mind planovers. I cooked the Kofta last night and I have to say, I was surprised that it was so tasty. It is just a simple meal of basically ground turkey meatballs and a large salad, but it is really flavorful. The meals take approximately a half hour from start to finish and all the ingredients are premeasured. You just open each container and assemble as directed. I picked 3 meals per week, which actually gives me 6 meals. So far so good.
