We did a 2000 piece puzzle and it wasn’t fun by the end. 1000 pieces are good for the space we have where we can leave it out.

We did a 1000-piece puzzle every summer while my kids were in school. We each did a little at a time. It's one of our happiest summer memories.

I prefer 1000 pieces, although occasionally I will go higher/lower, if I love the image. And that is due to space. I do my puzzles on a 5 foot collapsible banquet table in my living room, so I can watch/ listen to news/movies while I am working. I also made my own puzzle board with a sheet of hardboard, with rulers attached at top and one side (after knocking over a 90% completed puzzle). I live alone, so I prefer to work on the puzzle alone, as I like to create vignettes of the picture, then pull it together. I started serious puzzling about two years ago while recovering from surgery, and now, that one hour a night before bed helps me relax.
The SIP has really interfered with my zen time, since so many puzzles/companies are out of stock. All the the newbies are invading my territory. I fortunately had a stock of 10 before the lockdown and have placed several orders since. My year to date total - 42 puzzle/ 37,048 pieces.

We did 5000 pieces and that was too much for me. We taped two folding tables together and still couldn't fit all the pieces on our tables so it was hard to look for the pieces we needed. It took us a year to do it, we abandoned it a few times and finally completed it out of sheer will. 1500 to 2000 is my sweet spot, I find the 1000 ones too easy now.

The largest I have done is 2,000 but I like the 1,000 piece ones. 500 seems too small and the 2,000 takes too much room. 1,000 is perfect.
One of our radio DJs did one of those 40,000 piece ones. After he finished it (he would do puzzle parties).. it was donated to the Children's Hospital.

I do 1000 piece puzzles. My puzzle mat wouldn't fit anything larger than 1500 pieces. The largest I've done is a 2000 piece on a cruise ship. Sil and I always find the puzzle table and spend quality time up there.

My preferred range is 2000-3000. But the only table we have big enough is now my husband's office. Plus, we have a 5 year old "chaos beast" cat. So I have only been doing 1000 piece puzzles, which I can do in about a day and a half. I had a super hard 800* piece puzzle, which I needed more time with, so I was able to do it in my scrap room, and keep the cat on the other side of the door. I would love to do one of those super large puzzles. But we don't even have floor space in our house big enough to do it. If anyone is in need of a challenge, the British Museum's Rosetta Stone puzzle is surprisingly hard for so few pieces! If they ever start shipping again.
