I didn’t realize there were so many variations. So many things I would never consider adding. We don’t like crunchy toppings here.
My favorite from scratch is in the instant pot just cook and then add milk (Ir cream) and cheese. We don’t add other seasoning and prefer medium cheddar to sharp. It’s easy and it’s good. Since we don’t like crunchy we eat it straight out of the pot lol. If baked some of the pasta might get dry and crunchy.

**disclamer: I don’t eat Mac and cheese due to a dairy allergy. Can you eat goat or sheep's milk cheeses? I follow Alton Brown's recipe, but use Kasseri cheese and soy milk or a soy/almond milk cream blend I buy at the supermarket. It's good! I don't have a dairy allergy, but close. It's worse than just lactose intolerance.

It's worse than just lactose intolerance. No, I can’t. The doctors think it’s the milk proteins, but that doesn’t seem to track with goat cheese. So who knows what it is exactly. But even bread made with milk will set me off. I do make my own vegan cheese that I’ll use in a pasta bake with marinara sauce, but it’s not a good enough substitute for Mac and cheese. It’s been about 5 years since I’ve had dairy, but I still remember how good it is!

I make mine in the pressure cooker.
Cook one pound of macaroni in one quart of chicken broth for 5-6 minutes and release. Do not drain.
Add three cups cheese (my family likes velveeta, but I like adding a combo of different shredded cheeses or sharp cheddar) and the following spices to taste: garlic powder, onion powder, salt, pepper, and smoked paprika (optional, but I LOVE it!). Stir until melted, adding milk or heavy cream as necessary for the proper consistency.
I haven't made mac and cheese any other way since I tried this two years ago. Using velveeta keeps it really smooth, but you need less milk/cream if you use it. The regular cheese does tend to be a little "grainy" and needs the heavy cream to get it really smooth.

I love Mac and cheese! The heathens that live with me can't bear it at all. I occasionally buy a little carton from a local BBQ place. It has paprika in it. It's amazing. How does somebody not like macaroni and cheese? I don't. I have tried many, many mac and cheeses. I love Kraft dinner. Period.

That's the recipe I use. It's so good. Last time I made it, I had to use baby swiss instead of gruyere. It was a good substitute. It's expensive to make with that vast amount of cheese.
