I frequently smell dog shit when no one else does. Usually it is because there is dog shit somewhere and no one else noticed. So I totally don’t think you are losing your mind. I believe you. OMG, I totally LOLed after reading that!

We once had a gas leak coming from the fireplace. I kept telling DH but he swore he couldn't smell anything. We finally called the gas company and the tech said he didn't smell anything either. He brought out a little wand thingy to test and sure enough, there was a leak.
DH says I have an oddly strong sense of smell. I'm especially sensitive to the smell of must or mildew.

Phantosmia:- Phantosmia is also called a phantom smell or an olfactory hallucination. The smells vary from person to person but are usually unpleasant, such as burnt toast, metallic, or chemical smells. Problems with the nose, such as sinusitis, or conditions of the nervous system or brain, including migraine, stroke, or schizophrenia can cause phantosmia.
I get phantosmia every now and again, each episode usually lasts about 3 weeks. Until it was diagnosed, I simply could not work out why I could smell a sort of chemically burning smell, but no-one else could. I began to think I was producing the smell, and dreaded getting close to anyone in case they could smell it. I could often smell it in my car, so I wondered if it was com8ng from there, but my husband couldn’t smell it in my car. I had a series of dental appointments during one episode, so I plucked up the courage to ask my dentist if she could smell anything from me - dentists get pretty close, so she would be able to smell anything going on! She assured me she didn’t smell anything at all from me, so that’s when I went to the doctor and eventually got the diagnosis.
After various tests, there seems to be no reason for my phantosmia, and there is nothing that be done to relieve it. In very severe cases, or where the phantom smell is truly awful, surgery can be done but that can have its own unwanted side effects.

Ever since I developed Fibromyalgia, my sense of smell has been annoyingly sensitive. I can taste perfume or scented lotions just by walking past someone wearing it. Well, at least I could prior to mask wearing. I have been sound asleep and suddenly jolt awake when one of the cats use the litter box. It smells so strong to me that I swear they pooped on my very pillow. I have to get up and go flush it immediately and then spray some Febreeze in the area. I don't like the Febreeze smell either, but it is better than cat poop. I always had a pretty good sense of smell, but never like this. Have you noticed a change in your olfactory sensitivity from the past? Is it only mold that you can detect or do you smell other things much more than you should? My ex used eat at a certain Italian restaurant and I knew it within seconds of him entering the house. Something in their food made him absolutely reek. He wouldn't tell me he had eaten there, of course, but according to him, he never once got away with eating there without me smelling it on him and forcing him to shower and brush his teeth immediately. He found it like a superpower and would be all excited when I caught it. I don't know what they used as a seasoning, but it reacted in a weird way with his system and he stunk so bad that I couldn't be near him. And this was all prior to the Fibromyalgia! Me too! Most people think I'm crazy when I say that.

Phantom smells like cigarette smoke are reasonably common for people with migraine. They are often an indication for me that an attack is on the way. Any correlation for you? I've had that a few times. But since OP is smelling it in the same spot in the house it seems odd. I do have a crazy sensitive heightened sense of smell now also which is what bothers me frequently vs the couple times I had phantom smells.
