From me? I have been making it the past few weeks. I am able to eat the entire thing on the program I am on as it is basically veggies lol (but I dont! I get about 3 servings out of it). Its quick and easy and so yummy! Of course, as always, it is better with real pasta, but the spaghetti squash works for what I need. large container of cherry/grape tomatoes square of feta olive oil and spices place the feta in middle of the baking dish, pour the tomatoes in. Top with olive oil and spices (I use basil and Italian seasoning). Bake for 25 min at 400F. Squish it all together and stir to combine. Add in pasta and stir. Enjoy. I have been looking for a block of feta to try this recipe but so far have only seen crumbles. It looks really tasty! I bought a container at Costco and have cut 6 blocks from it. Not bad for $10 (CAD)!

Happy Wednesday friends!
It's been a busy day! I have some errands that I AM going to run today. I'm hoping work will slow down soon, so I can get them accomplished.
DH left for the ranch a few minutes ago, He wants to make sure there aren't any residual issues with the freeze and ice we had last week that he might have missed and it's calving season.
I'll likely pick up something while I'm out running errands, maybe a Jersy Mike's sub.
@jereymysgirl Love the sectional! So jelly :-)

Not sure exactly what’s for dinner. I have a couple of chicken breasts out I’m going to roast in a few minutes, but not sure what I’m going to do with them afterwards. Still haven’t made the corn chowder, so maybe that. The 11yo has requested burgers (“not fast food, grandma, I like it when YOU make them”) so that’s what I have in mind for tomorrow. Love the new living room, jeremysgirl!

jeremysgirl wow, your new couch is amazing! I can see lots of "Jeremy napping on the couch" in your future. My BIL dropped off some tomatoes from his garden, and then one of DSO's colleagues gave him some more tomatoes from her garden, so I decided to make a tart with them. Caramelised red onion with balsamic vinegar, bacon, salami, and the different varieties of tomatoes, and puff pastry. I still have quite a few tomatoes left so I might make some passata before they go off. Dinner tonight is Cornish pasties. I have made the meat nad vegetable filling, and will assemble them and cook when I know what time DH is likely to get home. Sue, I have eaten many a Cornish pasty in my lifetime, but I have never made them. Do you have a recipe you could share please? I know there are a gazillion recipes out there, but a tried and true one would be good.

I was able to get off of work at 3pm instead of 7pm. Census is around normal, so good to see after the craziness with the pandemic a few months back. I have a hardwood smoked bacon and cracked black pepper pork loin in the oven. Ill make chicken flavored noodles and green beans with it. Dd has a tennis league she's subbing in for after gymnastics so I'm glad I had a plan. jeremysgirl, great couch! I've had the same furniture for 20+ years. I'd like to find some nice leather couches for den once dd goes to college. I'm waiting to see how much college costs me. 😅

It’s so sad for friends of ours. Wife is at home and husband in care. Other friends don’t see anyone, groceries delivered. No bubble at all. They now have depression and don’t go out for fresh air. They are very good friends. It’s so sad right now. My dad drives me everywhere so we can get out. I went to the grocery and liquor stores today. That’s my comfort level. We have walking rules. Two unrelated people walking 2metres apart with masks is acceptable by law. A family can walk together.

jeremysgirl Nice couch!! Busy day with video meetings, exercise and more. Made a big pot of chili which I probably should have cut the recipe in half for just the two of us. For the rest of the week my posts will be rechauffe. I made it too spicy.

Not too much has been going on here except cleanup and lots of reorganization of the house. Last weeks crappy weather made me realize how complacent I have become in letting everything build up around the house. I have literally been going through every cabinet and closing and tossing crap. Anything worthwhile that I don’t want is going to goodwill.
Biggest goth are or chuckle depending on your outlook has been the plastic food storage container cabinet! My goodness, I have tons of containers with no matching lids and tons of lids with no matching containers. I tossed them all into the recycle bin. All except the deli containers and food prep containers. They are universal in that the deli containers and lids all match up regardless of sizes and the same with the food prep containers. And it all fits in less space. No more glad, Rubbermaid or Tupperware containers. I am so done with those!
Dinner tonight was chicken, rice and gravy, mixed veggies and a small salad.

Sue, I have eaten many a Cornish pasty in my lifetime, but I have never made them. Do you have a recipe you could share please? I know there are a gazillion recipes out there, but a tried and true one would be good. I don't actually have a recipe. I make a meat and veggie filling, similar to what I make for cottage pie, but with the veg cut smaller and not so much gravy, partially cook that up, let it cool and wrap it in premade pastry sheets. Not particularly authentic, but it tastes good.

I'm pretty much the only human she socializes with ... she needs it Have fun with your friend! It's kind of the same with this friend. She and I are the same age and taught together. Her sister and brother in law live in Buffalo (not far from here) but they kind of forget about her from time to time. She is a WONDERFUL person. Both her parents are deceased also. We chat on the phone often and go to card making classes also but we have not been able to go in a couple months because of other conflicts. So dinner tonight was what we both needed.
